I have a recipe (butternut squash soup) that calls for either. Which do you use and why? Is there a flavor difference?

A little bit of a difference but I've learned most people can't tell a difference when used in a recipe. Also depends on your brand. Most chicken stocks taste saltier to me than most veggie stocks. Also assuming that your recipe has no other meat or dairy in it, veggie stock would make it vegan friendly. If it has milk in it, the veggie stock would at least make it ovo-lactovegetarian friendly.
