Can anyone share some :yum: recipes?
I'm thinking cut up cooked chicken... need some new ideas with what to do with it.

Old standby's in our house, are chicken/stuffing casseroles, chicken pot pie, I attempted a chicken shepherd's pie once, it was unique, but I haven't made it again ;) We also use cooked, shredded chicken to make chicken tacos or chicken quesadillas... Soups are always a good choice... A warmer weather favorite of mine, is to use the cut up chicken in pasta or green salads. I'm not going to bother to include recipes, mostly because I rarely cook with "recipes" but if any of these are new/interesting to you, I'll be happy to give you instructions.

my current fave is curry chicken salad--- add chopped celery, green onions, almonds, dried cranberries, cilantro and a dressing of yogurt, honey, lemon juice and curry:yum:

1 (8oz) pkg. cream cheese (I use a little less)
1 Cup. Salsa
2 Cups chicken Breast (I use canned chicken sometimes)
1 (15.5 oz) can of pinto beans- drained. ( I sometimes use re-fried beans)
6 flour tortillas
2 Cups. Shreddd Colby Jack cheese (I use whatever cheese I have on hand~ mostly cheddar)
Jar of enchilada sauce
Pre-heat oven to 350 degrees. Spread enchilada sauce on bottom of baking dish. In sauce pan combing cream cheese, salsa, stir until blended. Stir in chicken & beans. Fill tortillas. Place a little more enchilada saucew on top. Sprinkle with cheese. Bake 30 minutes. Garnish with lettuce, tomatoes, sour cream. Serve with mexican rice.
You can change this basic recipe up to suit your taste.

A friend brought over stuffed shells made with chicken, stuffing and cream of chicken soup. I was EXTREMELY surpised that 3 of my four liked it and 2 of them think my friend should be on Top Chef now! :lol: Even I liked it and I can be texture fussy. ;)

...my Peachy Pork Picante recipe? I got the basic idea from Southern Living Magazine but changed it up to make it healthier. I RARELY fix it with pork but use chicken instead. Here it is if you'd like to try it:
PEACHY PORK PICANTE
2 lbs of boneless pork, cubed (you can also substitute chicken which I did the second time)
Cumin
Chili Powder
Garlic Powder
2 tablespoons of olive oil
1 cup of ALL-FRUIT or JUST FRUIT peach preserves/jam
1 16oz jar mild salsa
Hot cooked rice
Sprinkle the meat generously with the 3 spices. I'd do about equal amounts of chili and cumin and a little less of the garlic.
Heat oil in a large skillet over medium-high heat. Add pork and cook. Stir constantly until browned/cooked on all sides.
Stir in preserves and salsa; cover, reduce heat, and simmer 15 minutes, stirring occasionally.

Dawn- thanks for suggesting throwing it in some pasta salad. We are still in "winter mode" here and I forgot that would be tasty.

We are still in "winter mode" here...
Yep, we're just across the lake from you... so I had to go back and edit my original post to add in the salad ideas... :roflol: Though it's trying really hard to be spring... it just can't make up it's mind. We get maybe one day that's in the sixties, and then drop back to hover around freezing for a week or so, then another sixty degree day... :crazy:
