View Full Version : Chicken Salad ideas needed quickly!!

It is a beautiful day here and I don't want a "hot" meal for tonight. So I am going to attempt to make Chicken Salad....

Now, I am embarrassed to admit that I have never actually made this before.

Could you all please share with me your easy and tasty variations in making chicken salad???

Also, what do you normally serve with it?

I know this is late in the day to be asking about something I am making for tonight, but I have just had no other inspiration for dinner so this is what I am going with. :lol:

I already have the cooked chicken but may just need to run out for some other ingredients.

I just like a nice simple one of chopped up cooked chicken mixed with mayo or salad dressing and something sweet such as chopped apple, pineapple tidbits, chopped up seedless grapes, or finely chopped sweet pickles (or relish). You can season it to taste with pepper.:)

And I normally serve mine on some sort of bread...sandwich bread, croissants, big rolls, etc. You can also just serve it on a big bed of lettuce or mixed salad greens. If you go the pineapple, grape, or apple route, you can sprinkle the salad with Chinese noodles.

Mine is pretty simple too. I just add chopped chicken, mayo, chopped hard boiled egg, salt and pepper to taste. I also add a little bit of French dressing, not much, just enough to give it a little twang. (I'm not even sure twang is a word!:roflol: )

Edited to say: I forgot to add that I also like to add some relish too.

I like my chicken salad sweet. So I usually chop up some celery and add mayo and whatever fruit I have on hand...could be any combo of apples, grapes, oranges, peaches, strawberries, pineapple, etc. I also like some kind of chopped nuts...usually walnuts or pecans. Just mix it all together, enough mayo to "hold it together" and serve. Sometimes I serve it on a bed of lettuce and we eat it with crackers. My favorite is on croissants though any bread will do.

Thank you so much ladies!!

I ended up making it with chopped red grapes, chopped pecans & mayo. I felt like I had added PLENTY of mayo to it, but it still seemed dry, so I drizzled some Apple juice in it. It really helped and added just a bit more flavor.

This time I made sandwiches topped with sliced tomato....forgot to put on the shredded lettuce...:unsure: , oh well...it was still really :yum: .

I saw a picture in a magazine once before where you cut off the top & scoop out the insides of a tomato and fill it with chicken salad. That looked good too and I may give that a try next time, along with other variations that you all shared with me.

Hi Amy,
I am too late to give you a helpful recipe, but just wanted to say that we eat ours in scooped out red bell peppers :yum: I usually cut the pepper in half (tall ways...like a little boat) and then you can pick it up and bite into it!

My favorite is just chicken shredded with mayo fresh basil chopped and salt and pepper to taste

I usually serve chicken salad with either Hawaiian rolls or in a wrap, though I also like to serve some just in a bowl for those who would rather enjoy it without bread.

Here's our favorite recipe. Sorry, I don't use any specific amounts, just do everything to taste:

1 bag frozen chicken breasts
Garlic powder
Poppy seeds (if desired, I like them, they make it pretty! :D)
Grapes, cut in half (or smaller)
Celery, diced
Mayo (I prefer to use Miracle Whip)
Mustard (tiny bit, just to cut the mayo taste)
Nuts, if desired (which we don't around here - allergies)


Boil & shred your chicken breasts, put in a large bowl. Sprinkle garlic powder and poppy seeds liberally. Add grapes, celery and nuts if desired. Mix in may and mustard to taste. Refrigerate for an hour or more for flavors to marry. :yum:

1 can of chicken, drained
mayo and sour cream to equal about 1/3 to 1/2 cup (little more mayo than sour cream- I just eyeball it)
1 tsp Dijon mustard
1/2 Granny Smith apple chopped (I've used a bit of sweet relish in a pinch)
salt and pepper
You can also add chopped walnuts - maybe 1/4 cup (I don't add nuts)

Mix and chill at least an hour for flavores to blend. I usually eat it plain but would use wheat bread if I was making a sandwich

This one is one of my favorites ~

Poppyseed Chicken Salad

Chicken, cooked and cubed
Purple Grapes, halved
Red and Yellow Bell Pepper, chopped
Almonds, slivered
Poppyseed Salad Dressing

Mix all together (amounts according to your liking)!

I serve this on whole wheat bread ~ :yum:

~not a whole recipe but I recently made chicken salad that included chopped green onions, chopped celery and cherry flavored dried cranberries. It was :yum: It was delish with Town House Topper style crackers! :D

We call this "Fancy Chicken Salad" and it is SO good!

1 box Uncle Ben's Wild Rice Long Grain Original Herb
2 cups cooked cubed chicken
1 cup cashews (I've also used toasted almonds)
2 cups red grapes, sliced in half

Dressing:
2/3 cup mayo (I use Hellman's)
1/8 cup milk
2 T. lemon juice
1 tsp. grated onion (I use onion powder instead)

Follow rice directions. Mix chicken into rice. Mix salad and dressing together and refrigerate a few hours before serviing. Then fold in cashews and grapes.

No bread needed -- you eat it with a fork. :yum:

This is my favorite and one that everyone loves when I fix it :) Something different from your typical chicken salad. :)

4 to 5 cut up chicken breasts
1 8 oz block of monterary jack cheese (cut up into very small cubes)
1/2 dill pickle relish
Seasoning Salt to taste
Mayo (I haven't ever measured just enough to hold it all together nicely)

I usually serve on Crossiants but any bread will work

I don't have specific amounts, but this is how my Mom makes hers.

Chicken
celery
green olives (the kind stuffed with pimento)
1/2 mayo, 1/2 miracle whip

It is delish! We serve it with crackers. My dc love this stuff!

I don't have exact amounts but here is what I put in ours...

Shredded Chicken ( I have even used the canned chicken from Sam's Club and it turns out very well)

Shredded Swiss
Bacon (cooked crisp and crumbled)
green onion
mayo
season to taste with additional salt and pepper

We like ours on a pumpernickel/rye bread
