Hi ladies!

I am wanting to tweak my bread recipe a little...and maybe just even try a new recipe all together. gasp. :lol:

I would especially like your recipes if you grind your own wheat. :) I'm looking for wheat recipes...I have hard white and soft white.

Ok and maybe someone can tell me this...I see that some recipes call for an egg? I haven't been using an egg...but was wondering how that would change the taste and/or consistency of my bread? What do you think?

DH uses the recipe on the side of our bread machine, plus a few added ingredients.

1.5 cups water
4 & 1/4 cups flour (he grinds up 3 cups hard white wheat berries)
3 tbsp sugar
2 tbsp dry milk
1.5 tsp salt
2-3 tbsp olive oil
1 tbsp gluten
1 tbsp lecithin
1 egg

DH thinks the egg makes the bread fluffier (less dense).

This is my favorite wheat recipe. I don't grind my own though.

Honey Wheat

* 1 (.25 ounce) package rapid rise yeast
* 1 teaspoon white sugar
* 1/2 cup warm water (110 degrees F/45 degrees C)
* 1 (12 fluid ounce) can evaporated milk
* 1/4 cup water
* 1/4 cup melted shortening
* 1/4 cup honey
* 2 teaspoons salt
* 2 cups whole wheat flour
* 3 cups bread flour
* 2 tablespoons butter


DIRECTIONS

1. Dissolve yeast and sugar in 1/2 cup warm water.
2. Combine milk, 1/4 cup water, shortening, honey, salt and wheat flour in food processor or bowl. Mix in yeast mixture, and let rest 15 minutes. Add white flour, and process until dough forms a ball. Knead dough by processing an additional 80 seconds in food processor, or mix and knead by hand 10 minutes. Place the dough in a buttered bowl, and turn to coat. Cover the bowl with plastic wrap. Let dough rise for 45 minutes, or until almost doubled.
3. Punch down, and divide dough in half. Roll out each half, and pound out the bubbles. Form into loaves, and place in buttered 9x5 inch bread pans. Butter the tops of the dough, and cover loosely with plastic wrap. Let rise in a warm area until doubled; second rise should take about 30 minutes.
4. Place a small pan of water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).
5. Bake for 25 to 35 minutes, or until tops are dark golden brown. Butter crusts while warm. Slice when cool.

We don't grind our own wheat but here's the recipe(s) we use..


White Bread

650 grams of white bread mix
2 T of Grapeseed oil (or flax seed oil.. or any other form, but I use one of the first two listed)
350 ml of HOT water
1 1/4 teaspoons yeast

I put the water in my breadmaker, I put the oil in, the flour, and then the yeast. Because we go through SOOO much I've started using a mix so that's why you only see the white bread mix listed.



Wheat Bread

650 grams of whole wheat bread mix
2 T grapeseed oil
380 ml HOT water
1 1/2 teaspoons yeast

Same as above.


Raisin Bread

325 grams of wheat bread mix
325 grams of white bread mix (or any combination to equal 650.. my hubby isn't fond of whole wheat, but he never minds it this way.. I've even done it with 3/4 wheat and only a 1/4 white and he was okay)

2 T oil
2 T brown sugar or 1 T xylitol
350 ML HOT water (a bit more if you use MORE wheat flour)
1.5 teaspoons yeast
1 T of cinnamon or mixed spices
3/4 cup or raisins, divided

Put the liquids in, dump in the flours, dump in the yeast and 1/4 cup of raisins. When your machine beeps to notify you it's ending the mixing cycle dump in the remainder of the raisins. This one is a huge hit for breakfast..

The Bodines use an egg in their recipe and I like it better, fwiw.
