I don't visit this board much but I'm trying to do better w/ our budget & in the kitchen. One thing I read recently was to go meatless one or more days a week. Well, as much as that goes against my southern, meat & potatoes nature, I'm willing to try. Now I have just one question. What do you fix? I draw a blank after salad.:)

You might want to see if your library has any of the MooseWood cookbooks, they are all meatless meals/recipes. Lots of yummy ones to choose from.

Lentil soup (though dh likes this with some meat in it)

Veggies w/ biscuits or cornbread
A great way to cut expense w/ meat is to half or even quarter the amount called for in a casserole.

Chinese stir fry-lots of rice w/veggies
spag. w/no meat use hotdog buns for garlic bread w/ this
lazy lasagna-layer cheese with rotini noodles
vegetarian chili
bean burritos-mix refried beans, salsa, and cheese together in a pot and wrap inside a tortilla

My fave is using beans in stuff....but then, if left to my own, I will eat Mexican 3 meals a day....which I have come close to doing today,even! :))

You've gotten some good advice so far of:
Beans.
Beans.
More beans.
We love beans and have them all the time. But, from time to time, we just need a change!!!
So, when we're sick of that, we might do some veggie plates. That's always a popular choice here in the south, it seems.
Our veggie family also likes:
Baked potatoes.
Roasted Veggies.
Soup (we love soup... :yum: ).
Mexican (lots of Mexican & TexMex dishes can easily be made veggie)
We've done the veggie MenuMailers from Saving Dinner.com before, there are some good ideas there. My favorite recipe source, hands down is Fat Free Vegan (http://fatfreevegan.com/).

:yes: We actually do this a lot at our house. However DH's co workers have requested I learn to make veggie meals w/ out beans:lol: :blush: :lol: So I'll try the Moose Wood cookbooks. It's funny, I make most of these dishes it just never occurred to me to make them w/out meat. Then again I 'm one of those people that feel like you have to follow the recipe exactly. One thing that will help is that we planted some our veggie containers.:clap:

We love mac and cheese here I do a take off of Rachel Ray's mac and cheese with adding chicken stock to the white sauce it gives it a great flavor and lightens it up and you don't use all your milk (I hate running out of milk)

I try to incorporate some fish or other type of seafood into our diets at least once weekly, usually on Fridays. You can always just make a meatless Spaghetti Sauce or meatless lasagna too;) Here are some of my favorite Seafood Recipes:
Salmon Burgers
Tuna Salad
Mustard Glazed Salmon
Tuna Noodle Casserole
New England Clam Chowder
Manhattan Style New England Clam Chowder: the red one

Well I am of no help! I just mentioned your topic to dh and said "I guess we can't really do this, huh?" an he said "yes, if you want to die" :roflol:.
DH has to have his meats! DS on the other hand would be fine with this.

A cheese pizza with a salad is a good meatless meal.
