View Full Version : Healthy Muffin recipes?
I usually buy the packaged muffin mixes and my kids love them BUT I know I can make a much healthier version. Can anyone direct me toward some good, healthy muffin recipes?

My boys really liked the Banana Chocolate Chip muffins at tammysrecipes.com. My oldest usually won't eat any type of banana bread or muffin but he loved these. I didn't have any mayo so I subbed plain yogurt and it worked great. The only downside I had to it was that it made a lot of muffins for just the 3 of us and they didn't freeze well. Next time I make it I will cut the recipe in half.

We have a couple muffin recipes that we really enjoy:
Bran Muffins (http://allrecipes.com/Recipe/Bran-Muffins-II/Detail.aspx) these are basic and you can add raisins, cranberries, or any extra you want. We like them just the way the recipe has them. The batter can be kept in your fridge for up to six weeks if you want to mix it up and then have them fresh during the week(s) ahead.
Banana Muffins/Bread (http://www.bettycrocker.com/Recipes/Recipe.aspx?recipeId=35307) we use this as a muffin recipe by dividing into muffins tins instead of a loaf. It also freezes well, I just wrap each muffin in foil and them put them (6 at a time) into baggies and freeze.
Sunny-Lemon Raspberry Muffins (http://www.bettycrocker.com/recipes/recipe.aspx?recipeID=1177&Source=SearchResultPage) are also a BIG hit here. They freeze well too. I usually make a double batch and put half or more in the freezer. I just wrap each one in foil and then put them by the half dozen or so in baggies. We let them thaw out, or defrost them in the microwave.

I just found a wonderful muffin cookbook at my library. It is called Mad About Muffins by Dot Vartan. It has tons of interesting variations and recipes that break from the standard blueberry or bran muffins.
For making muffin recipes healthier, you can make any variety of substitutions:
~Whole Wheat pastry flour --> for all purpose flour
~applesauce -->for oil
~skim milk -->for any other type of milk
~evaporated skim milk -->for cream
~2 egg whites -->for every egg
