View Full Version : Have a freezer full of chicken, chicken and even more chicken

so I need some recipes or ideas.

I have roasters, breasts w/bone, boneless breasts, drumsticks, cut up fryers and who knows what else. The reason for all the chicken, I buy it on sale and throw it in the freezer.

We had chicken tender stir fry last evening. I told my dh, he had better have an appetite for chicken in the coming days and weeks, b/c that is all we are going to eat :lol:. His look said it all! "I don't think so"

I will probably do a chicken dish every other day, so not to get to sick of it.

So, what ideas/recipes do you all have to offer??

Most of the chicken I can just take out of the freezer and cook it. It is those individual frozen packaged kind from Wal-Mart.

Chicken pot pie

Chicken tacqitos

Chicken tacos

Chicken enchiladas

Chicken chili

Chicken fajitas

Chicken pockets (shredded chicken, sour creme and chives inside cresent roll dough. Sprinkle crushed stuffing mix (stovetop,etc.) on top and bake. YUM!

I'm still thinking.........

The chicken pokets sound really good. Can you leave out the sour cream? If not, can you taste it? DH doesn't like sour cream. Is there a way to hide it if I can't leave it out or substitute it?

There are several variations to the recipe, so read the thread.

My sil "invented" a great, easy, yummy recipe not long ago -- dice chicken and sautee it in a little butter and pineapple juice (from a can of pineapple). After the chicken cooks, add a little cornstarch to some water and thicken the sauce. Serve the chicken over rice (or rice on the side) and the pineapple on the side. My kids LOVED this, and hers do, too :thumb:

Chicken stir-fry -- sometimes I just buy the Oriental Veggies frozen and sautee the chicken in teriakyi (sp?) and honey :yum: and serve it over rice. hmmmmmm.... maybe we'll have that tonight -- dh would LOVE it :D

Chicken Noodle Soup with some homemade bread (or bought bread :lol: )

Chicken Divan (with broccoli and cream of ___ soup) :yum:

Honey Mustard Chicken -- here's a great, easy recipe:
8 chicken breasts (w/bones) -- often I use boneless, skinless
1/2 cup butter or marg
1/2 cup honey
1/4 cup Dijon mustard
1 tsp. salt
1 tsp. curry powder
Melt the butter and then mix all the ingredients together. Pour over the chicken. Bake at 350 for 1 to 1 1/2 hours. Stir and flip every 30 minutes. If you use boneless chicken, it'll take significantly less time. This is also an easy crockpot recipe.



Chicken Pot Pie -- here's my recipe:
* 1 fryer, cooked and deboned (I never use a whole chicken but instead sometimes use a package of chicken breasts diced or leftover turkey).
* 1 onion, chopped
* 1 can cream of mushroom soup (some recipes call for cream of celery if you don't have mushroom, but I always use mushroom)
* frozen mixed veggies -- however many look "right" (some recipes call for 1 can of VegAll or 1 can of peas and 1 can of carrots, but I never use the canned veggies. I use the frozen mixed veggies with peas, corn, carrots, green beans, limas, etc). I use about 1/2 a bag, probably.

Topping:
* 1 stick margarine, melted
* 1 cup milk
* 1 cup self rising flour

Sautee the onion in a little butter. Add the chicken/turkey and water and let it simmer about 30 minutes. (Add bullion if you want for flavor -- I never do). Make sure it's not too "watery," and then add the veggies and cream of mushroom soup. Mix thoroughly and let simmer for a bit (5-10 minutes). Pour into a greased 13x9 baking dish. Make topping (melt butter, add milk and self rising flour and mix together). Pour on top of chicken/veggie mixture. Cook at 350 for 45 minutes or until browned (may be as much as one hour).

Robin, I bet you could use grated cheese instead of sour cream or maybe even cream cheese (although I'm not sure how good that would be :unsure: ). I have a spinach quiche recipe that calls for plain yogurt OR sour cream, so maybe that would be a substitute. I'd be inclined to just go with grated cheese, though .......

Some of our favorites our chicken and rice (sometimes this means boil the chicken, remove, cook rice in chicken broth, add chicken back, and sometimes it's Uncle Ben's Chicken flavored rice with chicken and veggies), chicken and dumplings, chicken fajitas, mexican chicken (recipe is posted in the post about using up tortilla chips), creamy chicken casserolle..... We just love chicken!

The chicken pocket recipe I have indeed calls for cream cheese rather than sour cream. I have no idea where it is just now...

I cook for my dinner co-op on Thursdays. I was just thinking earlier today that I don't have a clue as to what I should make this week. I haven't made Chicken Divan in quite some time...This is what I'll cook. Thanks! :clap:

Yes, you can make the chicken pockets with creme cheese, too. I use whatever I have on hand!

Use one of your roasters for Roasted Chicken. Put in roasting pan season with rosemary, tyme, salt, pepper, a little garlic and add your favorite veggies, potatoes, carrots, onions, and celery. (You can also do this in the crock pot).

After supper, de-bone any leftover meat, throw that carcass in a big stew pot. Cover it with water, season like before. It makes the most delious chicken broth. Let it simmer until bedtime. (or at least a couple of hours) Strain divide into containers and freeze. You can add back the leftover chicken meat to some of the broth and leave some of it plain.

Hi Melissa, I get chicken usually at Wal-Mart (their frozen portions in the bag) about 2 weeks ago they had the chicken breasts on sale for $4.00 each :clap:. They are regular $6 or $7 a bag.

I get fresh chicken at Food Lion usually on Tuesday's or Thursday's. They put lots of meats on sale on these two days, it's like a clearance sale. Usually marking them down $3 - $5 dollars each. These are not usually the meats that are cut fresh that day though, but sometimes they are.

I have gotten whole fryers at both Wal-Mart and Foodlion for like $2 to $4 dollars each and these are not small fryers. I have gotten some that look like small turkeys (which is another thing that I usually have a few of in the freezer, I buy them around thanksgiving or Christmas when they are like $.20 a pound, didn't see that last year though).

I really don't look for sales on meats. If I have some extra money in our account, and I am at the store and see some different meats on sale, I will usually stock up.

The only ads I watch are Kroger ads. I just watch for what is on the the 10 for $10 sales.

We also have a locally owned grocier that has pretty good prices on meats a lot of the time and they have the large family packs.

I just remembered another scrumptious recipe that's a favorite:

CROCKPOT CHICKEN STROGNOFF
Dice 4 chicken breasts
Sprinkle chicken with 1 package DRY Italian Seasonings Dressing Mix
2 Tbsp. butter
Mix with 1 can cream of mushroom soup
Cook on low for 5 hours/3 hours on high or about 30 minutes on the stovetop
Add 1 8 oz. package cream cheese for the last 30 minutes (you can use a smaller amount -- I often use about 3/4 of a Whipped Cream Cheese container)
Serve over egg noodles (or any other kind)
