We made meatloaf the other day and the kids loved it. However, even though we added oatmeal and shredded carrots, it wasn't very healthy for us. How do you make your meatloaf? What kind of meat do you use? What sort of things do you put in your meatloaf? Thanks for sharing! :kiss:

:eek: Watching anxiously! I have no idea how to make meatloaf, but it's something my dh really likes, so I need a good recipe.

These are my top three faves:
Meatloaf Brasciole
1 1/2 lbs. ground beef
1/2 c. Italian bread crumbs
1 egg
1 small onion, chopped
2 cloves garlic, minced
3 tbsp. grated Parmesan cheese
2 tsp. dried parsley
1 cup baby spinach
6 slices deli ham
6 slices provolone cheese
Preheat oven to 450 degrees. Mix meat and next 6 ingredients. Flatten meat on wax paper into a thin layer (1/2 inch thick, 12 in. X 8 in.). Layer with baby spinach, ham, and provolone. Roll meat into a large log, using wax paper as a guide (and removing as you roll). Bake 20 minutes.
Mushroom-Swiss Meatloaf
1 egg, beaten
1/2 c. milk
1 tsp. salt
1/2 tsp. pepper
1 1/2 lbs. ground beef
1 c. crushed butter crackers
3/4 c. sliced mushrooms
3/4 c. shredded Swiss cheese
1/4 c. chopped red onion
2 bacon slices
Blend all ingredients except bacon. Press into a loaf pan. Place bacon on top and bake at 350 degrees for 50 minutes.
I made Little Cheddar Meatloaves (http://allrecipes.com/Recipe/Lil-Cheddar-Meat-Loaves/Detail.aspx) for our 50's themed Sweetheart Banquet last year. They're always a huge hit with everyone who tries them...except our 8-year-old who declares he doesn't like hot ketchup. :lol:

Meatloaf
2 eggs
1 c milk
2/3 C bread crumbs (seasoned Italian)
1 ½ lbs. ground meat
½ C chopped onion
½ t sage
½ t cracked pepper
1 t salt(sea salt)
Worcestershire sauce
Press into a loaf pan
Top with catsup mustard and molasses sauce
bake at 350 degrees for 50 minutes.

My absolute favorite (I make it frequently) is Ina Garten's recipe for Turkey Meatloaf. It makes 1 BIG meatloaf...or two regular size. I always make the full recipe and we enjoy the leftovers. :yum:
3 cups chopped yellow onions (2 large onions)
2 tablespoons good olive oil
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
1/3 cup Worcestershire sauce
3/4 cup chicken stock
1 1/2 teaspoons tomato paste
5 pounds ground turkey breast
1 1/2 cups plain dry bread crumbs
3 extra-large eggs, beaten
3/4 cup ketchup
Recipe
Preheat oven to 325 degrees F.
In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.
Yield: 8 to 10 servings

Oh my these sound so good...I will have to try the one with the ham and provolone!
Most times I've been throwing it together with cheese, garlic, breadcrumbs, eggs, ketchup salt and garlic!

this is a family fav.... make 1 loaf I always double
Meatloaf-
1lb ground turkey
1 pkg jimmy dean sage sausage
3/4 c breadcrumbs
3/4 c milk
1 egg
sprinkle onion podwer and salt and pepper in
Sauce-
2c brown sugar
1 1/2 tsp dry mustard
1 1/2 c water
1/2 c vinegar
dash ginger ( i do a little more than a dash)
1 T cornstarch
mix everything for meatloaf and make into a loaf. Add all ingredients for sauce except cornstarch into saucepan and bring to a boil. Boil lightly approx. 1 minute. Add cornstarch to thicken. Pour sauce over meatloaf and bake at 350 degrees for about an hour. Its super YUMMY!!:yum:

~A-1 Meatloaf~
1(8oz) can tomato sauce, divided
2 lbs. ground beef
1 medium onion, chopped
1 C. crushed corn flakes
1/3 C. A-1 steak sauce
2 eggs, beaten
1/2 t. pepper
Reserve 1/2 can tomato sauce.
Mix remaining 1/2 can tomato sauce, beef, onion, corn flakes, steak sauce, eggs, and pepper; mix well. Press mixture into 9x 5 inch loaf pan.
Bake at 350 degrees F for 50 minutes; pour off fat. Top with reserved tomato sauce; bake 10 more minutes.
Yield: 8 servings
