Well, I haven't made this (http://allrecipes.com/Recipe/Grandmothers-Buttermilk-Cornbread/Detail.aspx) one as muffins, but if you want sweet, it's a really nice cornbread. It's definitely very cakey. :yum: It seems to me like it would make into muffins very nicely. Too cakey to be sticks, though.

This is a very good basic recipe I got from allrecipes.com:

1 cup cornmeal
1 cup all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg, beaten
1/4 cup canola oil
1 cup milk

Preheat oven to 400 F. Greast muffin pan or line with paper liners.

In a large bowl, mix together corn meal, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into prepared muffin cups.

Bake at 400 degrees for 15-20 minutes, or until a toothpick inserted into a muffin comes out clean.

It's good as written...but I like it because it's also easy to tweak and make it more exciting. I've added grated cheddar cheese, corn kernals, green chiles and sour cream (not all together although you could probably do that.)

DeSha's is in downtown Lexington. The cornbread there is great!! I've used this recipe for corn muffins before. They turned out well. Definitely sweet!


DESHA'S HOMEMADE CORNBREAD

3 c. self-rising cornmeal
1/3 c. sugar
6 eggs
1 1/2 c. vegetable oil
3 c. sour cream
2 2/3 c. cream style corn
1 1/4 c. butter, softened
1/2 c. honey

For cornbread: Combine first 6 ingredients in order listed; mix well. Pour into greased 9x13 inch pan. Bake at 350 degrees for approximately 30 minutes. Makes 12 squares of cornbread.
For honey butter: Mix softened butter and honey together. Serve with warm cornbread.

Do you have the FIAR Cookbook? The recipe for corn muffins that goes along with Owl Moon is SO yummy and one of our favourites. :thumb:

Shay- I would love your sweet one! Dh LOVES the Jiffy corn muffin mix and I would love to find a homemade one that is just as good but maybe a tad bit healthier- if that's possible. :lol:

Well, what a coincidence! I am a Jiffy muffin girl myself and this is a knock-off. :D

Jiffy-like Cornbread

1 cup a-p flour(I use ww just fine)
1 cup yellow cornmeal
2/3 cup sugar
1 tsp salt
3 1/2 tsp baking powder
1 egg
1 cup milk
1/3 cup oil

Pre-heat oven to 400 degrees. Spray a 9-in round pan. In a large bowl, combine dry ingredients. Stip in egg, milk and oil unti well combined. Pour batter into prepared pan. Bake for 20-25 minutes or until tests done.

For muffins, adjust cooking time. I make muffin crowns and they take about 10-11 minutes.

I'm not sure about healthier, but I'm about to try some subs this morning. I'll let you know how they turn out. They just occurred to me last night. Duh! :eyes:

Shay shared her recipe awhile back when I posted about wanting a corn muffin mix...way back on the pink boards! :)

Okay, I fiddled with the recipe. I'm not sure I loved it, but the kids did. I subbed Grade B maple syrup for the sugar and homemade applesauce for the oil. The taste was good, it was a texture issue. They were more "cakey" than "cornbready". :unsure:
