I have a sick dh and would love some good chicken noodle soup recipes.

This is not exactly a recipe, but I just sort of winged it with this last week. I boiled two chicken breasts on the stove. Removed the chicken, added three or four cut up carrots, three or four stalks of celery, a couple of cubes of chicken bouillon, half a box of pasta, and then I added back the chicken. Oh, and salt and pepper to taste. I really thought it would be hard, but it wasn't bad :) Hope your hubby gets to feeling better!

Our quickest, easiest, chicken noodle soup recipe comes from Kraftfoods.com It's very tasty too..
1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. oil
1 can (14-1/2 oz.) chicken broth
1-1/2 cups water
2 cups assorted cut-up vegetables (sliced carrots, broccoli florets and chopped red peppers)
1 env. GOOD SEASONS Italian Salad Dressing & Recipe Mix
1/2 cup instant white rice, uncooked
2 Tbsp. chopped fresh parsley
COOK and stir chicken in hot oil in large saucepan on medium-high heat 5 min. or until chicken is cooked through. ADD broth, water, vegetables and salad dressing mix. Bring to boil. Reduce heat to low; cover. Simmer 5 min. STIR in rice and parsley; cover. Remove from heat. Let stand 5 min.
We usually use a mix of frozen veggies (carrots, peas, corn) and/or whatever leftover veggies in the fridge. We usually use pasta in place of the rice too. And we don't add the veggies until after the pasta is cooked or "nearly" cooked. That way they don't loose all their color. If you're using frozen veggies they really only need to heat up. :)

I just made a big pot of chicken noodle soup last week for all the sickies here. It was :yum:
I used 2 boneless, skinless chicken breasts, diced, and boiled them in a lot of water (made a big pot of soup).
* added 3 chicken bouillon cubes
* celery salt
* salt and pepper
* basil
* parsley
* 2 bay leaves
* chopped onions (1 large)
* chopped celery stalks (4?)
* chopped carrots
* frozen peas
* frozen butter beans (you could use any veggies or no veggies)
* 2-3 cups of precooked elbow macaroni noodles
Sorry I have no measurements -- I just sprinkled the spices in to taste.

I add chopped ginger and chopped garlic to mine, sauteeing with the chicken and veg for a bit before I add the broth....I always think the ginger/garlic combo adds zing and makes everyone feel a bit better:clap:
