My family loves this one. They love anything fruity :). I have a few pancake recipes. I just don't have time to type them all up. Here's one that I'll be making later in the AM.

PEACH PANCAKES
Serves 3 (I'll be doubling this)

1 egg (for pancakes and muffins, I always separate the yolk and white. Makes them fluffier. I add the well-beaten white at the VERY end.)
1/2 cup peach yogurt
1/2 cup milk
2 tbsp canola oil
1 tbsp sugar (I always use brown)
1 cup flour
1 1/2 tsp baking powder
1/4 tsp cinnamon
1/2 cup chopped peaches (fresh ... we don't have fresh ... or canned, but well-drained)
2 tbsp melted butter

Mix egg, yogurt, milk, oil and sugar.
In separate bowl, combine flour, baking powder, and cinnamon.
Add flour mixture to liquid mixture and stir just enough to combine. Batter may be lumpy.
Fold in chopped peaches.
Brush hot griddle w/melted butter. Preheat.
Pour approximately 1/4 cup of batter to griddle for each pancake.
Cook until bubbles form.
Flip pancake over and finish cooking.

I was talking to my dad yesterday (who is a great cook by the way!). He was making regular pancakes and added some cinnamon and vanilla....he said they are like French toast pancakes!:yum: We are going to try this sometime this week!

I was talking to my dad yesterday (who is a great cook by the way!). He was making regular pancakes and added some cinnamon and vanilla....he said they are like French toast pancakes!:yum: We are going to try this sometime this week!

:yum: I love the taste of vanilla in breakfast-y stuff :yum:.

Pancake Mix

4 cups quick cooking oats
2 cups flour
2 cups whole wheat
1 cup packed brown sugar
1 cup powdered milk
3 tbsp. baking powder
2 tbsp. cinnamon
5 tsp. salt
1/2 tsp. cream of tartar
Wheat germ if you desire ~ just a small handful.

In a large bowl, combine mix ingredients. Store in airtight container.

PANCAKES

2 eggs
1/3 cup oil
2 cups pancake mix
1 cup water

Beat eggs in a small bow. Gradually beat in oil. Add mix alternately with water; mix well. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle on medium - low heat; turn after 2 minutes. Cook until second side is browned.

Yield: 10 pancakes per batch.

Here's my recipe -- simple but :yum:

1 cup self rising flour
1 cup milk (a little more or less, depending on how thick or thin you want them)
1 egg
2 Tbsp. sugar
1 Tbsp. vegetable oil

I typically fry the pancakes in oil unless I'm trying to be healthy, and then I use Pam :lol: Fry on one side until the pancakes "bubble" in the middle (little "holes" pop out), flip them, fry on the other side, remove and put on plate covered with paper towels.

This makes enough to feed my family of 5 (3 young kids). You may want to double the recipe. By the way, sometimes I double it and freeze the leftovers to pull out and microwave.

For variations, I've done:
* chocolate chip pancakes -- just sprinkle chocolate chips on the top before you flip them
* blueberry pancakes -- sprinkle fresh or frozen blueberries on the top before you flip them
* apple/cinnamon pancakes -- thinly slice apples and place them on the top of the pancakes before you flip them and then sprinkle them with cinnamon sugar.

Here's my two. :)

Whole Wheat Pancakes(Mother Earth News)

2 cups ww flour
2 Tbsp brown sugar
1 Tbsp baking powder
1/2 tsp salt
1 egg + 1 white(I usually double recipe and add use 3 whole eggs)
2 1/4 cups milk
3 Tbsp oil or melted butter

Combine dry ingredients. In seperate bowl, beat eggs and whisk in milk. Quickly and gently stir the batter, just until incorporated. Let batter sit a few minutes while griddle heats. Use oil or butter to grease griddle.

I sometimes add a cup of blueberries to the batter or sprinkle choco chips on the pancake before flipping.

My kids favorite is:

Orange Pancakes(Mother Earth News)

1 cup ww flour
1 cup unbleached a-p flour
1 Tbsp baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon grated orange peel
1/4 teaspoon nutmeg
3 Tbsp sugar
1 egg plus 1 white
2 cups orange juice
1 teaspoon vanilla
oil or melted butter

In a large mixing bowl, combine dry ingredients. In a medium bowl, lightly beat egg and white then whisk in orange juice and vanilla. Make a well in the dry and add the juice mixture. Quickly and gently stir batter just until incorporated. Do not beat! Let batter sit a few minutes. Use oil to grease griddle and cook as usual.

I'm going to try some of these other recipes as well. My family loves pancakes! :yum:

My kids love these- I think these are close to the right meas. because I eyeball it these days!

1-2 eggs (2 if I want them to have more protien)
1 to 1 and 1/2 cups of milk (or 1/3-1/2 cup powd. milk and 1 to 1/2 cups water)
1/4-1/2 cup applesauce or sweet potato or pumpkin puree
1 to 2 tsp of vanilla

Mix above well

Then add 1/2-3/4 cup ground flax seed
1 cup or so of whole wheat flour
and 1 to 2 tsp of baking powder
and a 1/2 to 1 tsp of cinnamon

Mix and cook like pancakes- if batter is to thin throw in a bit more flour- to thick a bit more water/milk

I know this is approximate but I really do just open and dump to eyeball amounts in the bowl!
These are yummy and full of nutrients for my boy who is so picky.

Negin,

This is our family's favorite pancake. My husband's grandma used to make them for us. Whenever we have them our kids think of Great Grandma. :hcry:

Cottage Cheese Pancakes

In to a blender add:

6 eggs
1 c cottage cheese
1/2 c flour
1/4 c milk
1/4 c oil
1 t vanilla

Blend stopping to scrape down sides. Then blend for another minute or two until smooth. Lightly oil a very hot griddle (we turn ours to the hottest setting which is 425). Make about 5" pancakes.

These are so light and melt in you mouth. They are not chunky from the cottage cheese since you blend the batter. They are good with maple, coconut or fruit syrups. Yummy!! :yum:

Oh funny! I was just coming on to post about my daughter's favorite pancakes, which I made for her this morning, and they are cottage cheese pancakes :lol: Our grandpa made them for us.

Karen and Jo, I must admit that I was a bit skeptical about Cottage Cheese Pancakes. But now that you both say that you like this, I'm going to try it out :).

Another one ... I think I've posted this before. This is probably the absolute favorite that I make.

BLUEBERRY SOUR CREAM PANCAKES
2 cups flour
1/4 cup sugar
4 tsp baking powder
1/2 tsp salt
2 eggs (I always separate the yolks. I add the beaten white in at the very end. This makes pancakes fluffy :)).
1 1/2 cups milk
1 cup sour cream (sometimes I use plain yogurt)
1/3 cup melted butter
1 cup fresh or frozen blueberries

Blueberry Pancake Topping
1/2 cup sugar
2 tbsp cornstarch
1 cup water
4 cups fresh or frozen blueberries

PANCAKES:
Combine dry ingredients in a bowl.
In another bowl, beat eggs. Add milk, sour cream and butter. Mix well.
Stir into dry ingredients until just blended.
Fold in blueberries.

I then make the topping.

TOPPING:
In a medium saucepan, combine sugar and cornstarch.
Gradually stir in water.
Add blueberries.
Bring to boil over medium heat.
Boil for 2 mins, stirring constantly.
Remove from heat, cover and keep warm.

Now, I head back to the pancakes.
Pour pancake batter by 1/4 cupfuls onto a greased hot griddle.
Turn when bubbles form on top of pancakes. Cook until the second side is golden brown.

Buttermilk pancakes

This is an excellent recipe for pancakes!Wonderfully light and fluffy!Feel free to add a little cinnamon, berries or chocolate chips.

3 C. flour

3T. sugar

3t. baking powder

1 1/2 t. baking soda

3/4 t. salt

3 1/2 C. buttermilk

3 eggs

1/3 C. butter or margarine, melted



In large bowl, combine sugar, baking powder, baking soda, and salt.In separate bowl, beat together buttermilk, eggs and butter.

Heat buttered electric skillet to 380 degrees.

Pour wet mixture into dry mixture. Stir until blended. Do not over stir.Scoop up 1/2 C. batter for each pancake.Brown on both sides and serve. Yields: 12 pancakes

Here in Louisiana, pancakes are sometimes served with chopped pecans.

Does this work in a waffle iron as well? I make my own bisquick right now, but only use it for pancakes and waffles, and I hate that it has shortening in it. I'd love to try this one, but we prefer waffles!

I really don't have any idea if it would work or not. You could make smaller batch just to see if it would work. My thinking is that it would not, but I could be wrong. Doesn't really help you does it? :unsure:
