I was cleaning out our pantry and found barley. There's a recipe on the box that sounds wonderful! Just not used to chicken instead of ground beef.

i make a recipe called "White Chili" which uses chicken and northern white beans instead of gr. beef and red beans. we love it! :yum:

If it's that recipe on the Quaker barley box that's called something like Mexican Barley Chili, I LOVE that recipe. It's not anything like what I think of as chili (a good ol' Texas Bowl of Red) but it's a great soup.

Yes, that's where I got the recipe. We all enjoyed it last night! The best part, there's lots left for today so that frees my day more. Gotta love leftovers!:lol:

And that's one of those better-the-second-day recipes IMO! I need to incorporate barley more. I keep it on hand because I put it in my vegetable soup. I like that box recipe we've been discussing, and a couple of times I've used barley instead of rice in broccoli rice casserole. I suppose there would be some other ricey casseroles that would substitute well.

I happen to have a box of barley in my cupboard with this recipe on the back. I think I'll try it next week sometime. :yum:

We love white chili here too. We add corn to it and it gives it a sweet added flavor to the smokey cumin
