Hi all~
I want to start having big Sunday morning breakfasts with my family. I like the idea of the breakfast casseroles that you all have mentioned before. Please share some of you favorite :yum: recipes with me. My kids and dh will thank you :lol: .

Here's the one I use. It's always a big hit with guests!
Bacon and Egg Casserole
1/4 c butter
1 6 oz box croutons, unseasoned or cheddar & garlic
2 c shredded cheddar cheese
2 c milk
8 eggs, beaten
½ tsp dry mustard
1 12oz pkg bacon, cooked and crumbled
Melt butter in bottom of 11x 7 baking dish; turn to coat dish. Layer croutons and cheese and set aside. In large bowl, combine milk, eggs and dry mustard. Pour over cheddar and sprinkle with bacon. Cover and refrigerate overnight. Bake at 325 degrees for 40-50 minutes until set. Let stand 10 minutes before serving. :yum:

Eggs and Cheese Brunch
Beat together 4 eggs and 1.5 cups of milk. Add 2 Tbsp. melted
butter and 1/2 tsp dry mustard. Add 1/2 cup shredded cheddar and 1/2
cup shredded swiss cheese or mozarella. Dice finely and add 1/2
cup ham. Cube and remove crusts of 4 slices
of bread. Mix together and pour into greased 8x8 dish. Or double the recipe
for a 9x13 pan. Make the night before and refrigerate overnight.
Bake the next day at 350 for 45 minutes.

I wish I could give credit where credit is due, but these are a few recipes that I've gotten off the FIAR BOARDS that I have tried or are planning to try soon. The 1st 2 are easy and yummy. The 3rd I haven't tried yet.
French Toast
Melt 1 stick butter or margarine in 9x13" pan.
Add 1 cup brown sugar, sprinkled evenly over the bottom of the pan.
Place bread, 2 slices deep (if you are using storebought, if not, single slices ~1" thick would work fine) to fill pan.
Beat together 6 eggs, 3/4 cup milk, 1 Tablespoon of vanilla.
Pour over bread.
Sprinkle with cinnamon sugar.
Cover and refrigerate overnight.
In the morning, bake at 350 for ~45 minutes. makes it's own syrup.
BREAKFAST CASSEROLE (a keeper!)
3 c. hash browns, partially thawed
3/4 c. shredded cheddar cheese
1 c. browned breakfast sausage
1/4 c. diced onion
4 beaten eggs
1 can evaporated milk
Salt & Pepper to taste
Grease 13 x 9 baking dish. Arrange hash browns in bottom. Sprinkle with cheese, meat and onion. Combine eggs, milk, salt and pepper, pour over all. Bake at 350 for 40 to 45 minutes. Can be assembled the night before, then baked in the morning
Baked Apple French Toast
12 eggs
2cups Milk
2Tbl Vanilla
3-4 Med Green Apples
1/2cup melted butter
1/2cup Light Brown Sugar
1 Tbl water
6-10 slices of bread(i used raisin bread)
cinnamon sugar
Melt butter and mix with the brown sugar and water set aside.
Thinly slice apples and place then evenly in the bottom of a butter oven proof dish.
Pour the butter mixture over the apples.
Cut the bread slices in half and place them over the apples (overlapping them slightly).
In a seperate bowl beat the eggs till fluffy add milk and vanilla mix till no egg yolk is showing. Pour this mixture over the bread making sure all the bread is saturated.
Cover & refrigerate over night.Sprinkle with cinn/sugar. Bake 350 50-60 min.

Here is a favorite of our family! It is called Impossible Quiche. Sometimes we have it for dinner too!
Impossible Quiche
2 cups milk
4 eggs
1/8 teaspoon pepper
1/4 teaspoon salt (optional)
1/2 cup baking mix, such as Bisquick (reduced fat mix works fine)
add ins
1 cup finely shredded swiss or cheddar cheese
12 slices bacon, crisply cooked and crumbled or sausage or ham
Preheat oven to 350 degrees.
Grease a pie pan.
Put everything but meat in a bowl and blend. Add meat and pour into Pie plate. Cook for 45 min. Let stand for 5 min before cutting.
