View Full Version : Favorite Hot sandwiches besides grilled cheese?

Since the weather is so cold, I would really like to serve some hot sandwiches for lunch or dinner. Any keeper recipes?

Shredded Chicken sandwiches....yum!:yum:
1 broiler fryer chicken or 4 chicken breast halves
1 (10 3/4 oz.) cans cream of celery or chicken soup, undiluted
Salt and pepper to taste
Hamburger buns
Simmer chicken for several hours in water (salted) to cover (until meat almost falls off bones - this makes it much more tender than rapid cooking). Save 1/2 cup of broth. Shred chicken and mix with soup and broth. Add pepper and more salt if needed. Heat and serve on buns.
or you could do the really easy way for a real quick fix...
2 cans of white meat canned chicken
1 can cream of chicken or celery
salt and pepper to taste
buns
Mix all together and heat and serve on buns
I think this is a big Ohio thing as I grew up on them and they are at every dairy stand! :)

When we were dating my husband told me he wanted to cook for me and that he made a really great sandwich... hot bbq lunchmeat with cheese. I was trying to be on my best behavior and polite so I said that sounded great. In reality I was thinking :tongue:
He mixed ham and turkey lunchmeat that had been cut into small pieces in a frying pan with a little bbq sauce and let that cook until the sauce started to crystalize (if it's a sugar based sauce) and the meat got a little crispy. Then he divided the meat into sandwich size piles in the pan and topped with cheese. I think he uses provolone most of the time...but anything would be good.
Once the cheese has mostly melted he scoops the whole pile onto a croissant or roll and adds mayo and sometimes more bbq sauce. And let me just say...it's :yum:. I'm so glad that I was trying to be nice and let him make it for me the first time. Cause now I love it! :D

First brown ham and melt provolone in a pan. Then remove and put on buttered bread or you could spray olive oil in the pan. Then grill it. Putting spinach on right before it is done. Then add tomato and pesto. It is superb.

Chipped Ham and Cheese Sandwiches
Order chipped boiled ham from the deli
Butter and toast wheat buns
Put a large pile of chipped ham on bottom bun
Cover ham with choice of cheese ~ we use baby swiss
Bake until cheese is melted and ham is hot
Meatball Subs
Mix frozen meatballs and marinara sauce in a crockpot
Cook a few hours until hot and cooked through
Put a few meatballs and sauce on sub rolls
Sprinkle shredded mozzarella cheese and parmesan cheese on top

Tuna melts
Albacore tuna in the gold can (the ONLY tuna I will eat)
mayo
onion powder
garlic powder
celery salt
Mix all together
Scoop on bread add cheese and broil for a min or 2
you can also put these in a toaster oven
Grilled PB&J
It is soooo good. You make a PB&J like you noramally would only butter the oustide of the bread and grill llike a grilled cheese.
Meatloaf sandwhich
Take leftover meatloaf put it on bread with cheese and BBQ sauce or ketchup depending how you make your meatloaf

BLT
Pulled pork sandwhich
BBQ chicken sandwhich
Hot Roast beef with cheese sauce

Mmmmmmmmm, this all sound so good that I want to go eat again :).

We just had Grilled cheese, bacon and tomato...mmmmm!!
We also like shredded chicken, bacon, avacado...(We make a lot of panini here so whatever works in them)
Buffalo chicken, blue cheese dressing, and whatever we have on hand to fill it up.
Honestly, I make focaccia bread a lot and then we just fill it up with whatever looks good at the moment and put it in the panini press...

I have never heard of a grilled peanut butter and jelly sandwich, but I am going to surprise my kids with it. If I tell them in advance, I think they just may revolt! :lol:

Hot Ham Sandwiches
1/4 c. butter, softened
2 tbsp. finely chopped onion
2 tbsp. mustard with horseradish
2 tsp. poppy seeds or sesame seeds
6 hard rolls
6 slices cooked ham
6 slices Swiss cheese
Combine butter, onion, mustard, and poppy seeds. Mix well. Spread on both sides of hard rolls. Place 1 ham slice, and 1 Swiss cheese slice on each bun; cover with top bun. Wrap each sandwich in aluminum foil and bake at 350 degrees for 25 minutes.
Becky's French Dip sandwiches are also a huge and frequent hit at our house!

Any deli meat sandwich can be toasted(open faced and closed after toasting) under your broiler. :yum: Just remember to add anything delicate, like lettuce, after toasting. ;)

We have always had grilled peanut butters! I also like to take pot roast and cut it into chunks and put them in a pile about the size of a slice of bread or a sub bun and put cheese on top and mic it until it's melted. :yum:
Here's the italian beef recipe I use:
Slow Cooker Italian Beef
INGREDIENTS
3 cups water
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon onion salt
1 teaspoon dried parsley
1 teaspoon garlic powder
1 bay leaf
1 (.7 ounce) package dry Italian-style salad dressing mix
1 (5 pound) rump roast
DIRECTIONS
Combine water with salt, ground black pepper, oregano, basil, onion salt, parsley, garlic powder, bay leaf, and salad dressing mix in a saucepan. Stir well, and bring to a boil.
Place roast in slow cooker, and pour salad dressing mixture over the meat.
Cover, and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours. When done, remove bay leaf, and shred meat with a fork.
I put it on sub buns and add mozz or provalone and stick it in the broiler until the cheese melts.

We love this one:
two slices of raisin bread per person
two or three slice of ham per person
two slices of apple per person
1-2 slices of cheddar cheese per person
Preheat skillet.. Take the bread and lightly butter. Place a slice of cheese down, add 1 apple slice, ham, last apple, last cheese, top with bread and grill in the skillet. Enjoy.
Another one we enjoy is:
Honey Lemon Chicken
1 package of chicken breasts, boneless skinless
1/3 cup of honey
1/3 cup of lemon or lime juice
1 clove of garlic, minced
pound the chicken breasts to about 1/4 inch thickness, put in a baggie or other container for marinading. Add honey, fruit juice, and garlic. Turn breasts to coat and let marinade for 20 minutes (I marinade mine by putting them in the freezer like this, then I pull them out to defrost and the marinade as they defrost and until I'm ready to cook..) Heat grill or broiler, cook until juices run clear. brush with marinade while cooking if desired.
We serve them on rolls with lettuce, tomato, and onion. We use mayo/honey mix. You put equal amounts of honey to equal amounts of mayo in a bowl and mix well. Spread a thin layer on roll. Or use flavored honey. Lime flavored honey is delicious with this meal!

hot meatball sandwich
breakfast sandwich. - oversized english muffins with fried egg and a slice of cheese, you can add bacon, sausage, or ham if you like. We put a little bit of miracle whip on it. Everyone LOVES these. We generally just have the egg and cheese.

I actually made these yesterday. Boy were they good. Melted peanut butter and jelly with a crunchy, buttery bread....all I can say is that they were :yum:. My kids even liked them. At first they balked, but later they were thanking me for making them.

What is even better is grilled PB and chcolate, that isn't exactly a dinner or lunch but STILL good. For the chocolate I've used semi-sweet chocolate chips or a hersheys bar. OH MY they ARE the BEST!!!

I went shopping last night to buy ingredients to make most of the recipes shared here. I spent close to $100 dollars! :eek: Granted, I bought other staples, but gosh, I was shocked. I'm sure it has a lot to do with the rising cost of living, but I sure hope my family raves over my new found recipes. That will make me feel better at least. :lol:

I love these so much....
Hot Bandana Sandwiches
1 (7-ounce) jar pitted Kalamata olives, drained and sliced
1 1/2 cups diced, peeled white onion
1 pound ripe beefsteak tomatoes, chopped
1/2 pound mozzarella cheese, diced (about 1 1/2 cups)
1 cup grated Parmesan cheese
2 cloves pressed garlic
2 teaspoons salt
1/4 teaspoon pepper
2 teaspoons dried basil
1/4 cup wine vinegar
1/3 cup olive oil
10 hard rolls
3 tablespoons soft butter
3 fresh basil leaves
(Sometimes I add pepperoni or sausage too)
Mix the olives, onion, tomatoes and cheeses in a large bowl. Set aside. Blend the garlic, salt, pepper, basil, vinegar and oil into a dressing by placing in a covered jar and shaking. Pour it over the ingredients in the bowl, and toss gently. Set aside. Prepare each roll by cutting a shallow plug hole 2-inches in diameter out of the top, then pulling out the soft inside. Make sure you leave some bread on the bottom. The pulled out bread can be saved to make bread crumbs later. Melt butter, add the fresh basil leaves and allow the basil flavors to infuse into the butter. Brush some of the basil butter into the bottom of each roll. Place about 2/3 cup of the filling into each roll, then replace the plug on the top. Use aluminum foil to wrap each sandwich individually. If not cooking right away, place in the refrigerator and remove about an hour before baking. Bake in a 350 degree oven for 25-30 minutes.

I actually leave it out when cooking the meat. Instead, we each add it according to taste once the sandwiches are made. Another thing we do is add cheese at the end.:yum: HTH!

Sorry it has taken me so long to get my recipe posted, but better late than never, right? ;)
Grilled Teriyaki Chicken Subs
First you will want to thinly slice about 3 lbs. of chicken breasts. Then combine the following ingredients in a skillet:
1/2 cup soy sauce
1/4 cup olive oil
1 tsp. pepper
1/4 tsp. garlic powder
Add chicken and cook until is done, but while chicken is cooking, saute sliced mushrooms, (fresh or canned) onion and green peppers. Add salt and pepper to taste.
Grill sub buns on a well buttered griddle and then fill with chicken. Top with onions, green pepper, and mushrooms and sprinkle on a generous amount of mozzerella cheese. Serve while hot. :yum:

Mushroom, Black Bean and Green Chili Melt
2 Tbsp olive oil
8 oz mushrooms, sliced
1 glove garlic minced
4 italian rolls
1 can (15 oz)Black beans rinsed and lightly crushed
1 can (4oz) mild green chilies drained and chopped or 1 fresh jalapeno seeded and chopped.
1/4 cup chopped grape tomatoes or chunky salsa (mild or med)
8 oz shredded monteray jack
Preheat over to 350. In a large skillet heat oil over medium heat. Add mushrooms and garlic, cook stirring ocassionally until the mushrooms have exuded their liquid and it has evaporated (about 10 min). Cut bread in half and scoop out center leaving 1/2" shell-set aside
In a medium bowl combine black beans, green chilise and tomatoes or salsa. Divide the cheese in half, and also the mushrooms. Sprinkle the bottom half of the rolls with the first portion of cheese. Spread the rolls with half the mushrooms. Spoon the bean mixture over the mushrooms; top with remaining mushrooms, then remaining cheese. Gently press the top of the bread over filling. Wrap tightly in aluminum foil and back until heated through and cheese has melted (about 15 minutes) Serve! :yum:

I have a really simple one, but it's a *different* taste.....
I love to take a plain bagel, put some mayonaisse on it, then add deli ham to one side, cheddar cheese (or any other favorite cheese) on top of the ham AND on the other side ;) then broil it so the cheese melts and the ham is warm. Then devour :yum:

We toast the bagel, put the cheese on the warm bagel, and place some warm turkey deli meat on the cheese.

Allow cheese to melt (you could also add meat, but I prefer it without). When cheese is melty, put it on plate top with onions, tomato slices and spinach. Then add condiments-I like spicy mustard, a little goat cheese, jalapenos and pickles.

Gosh, somehow I missed that one! Believe me...I spent quite a while on her site. It is great, but I do wish she had her recipes in a printable format. I'll have to write out the shorter recipe version later when I have more time. Thanks for pointing this out. :)

Pesto
1 large bunch of basil, leaves only, washed and dried
3 medium cloves of garlic
one small handful of raw pine nuts
roughly 3/4 cup Parmesan, loosely packed and FRESHLY GRATED
A few tablespoons of extra-virgin olive oil
Start chopping the garlic along with about 1/3 of the basil leaves. Once this is loosely chopped add more basil, chop some more, add the rest of the basil, chop some more. I scrape and chop, gather and chop. At this point the basil and garlic should be a very fine mince. Add about half the pine nuts, chop. Add the rest of the pine nuts, chop. Add half of the Parmesan, chop. Add the rest of the Parmesan, and chop. In the end you want a chop so fine that you can press all the ingredients into a basil "cake" - see the photo up above. Transfer the pesto "cake" to a small bowl (not much bigger than the cake). Cover with a bit of olive oil, it doesn't take much, just a few tablespoons.
You can set this aside or place it in the refrigerator until you are ready to use it. Just before serving give the pesto a quick stir to incorporate some of the oil into the basil. Makes about 1 cup.
OR you can by it near the spaghetti sauce in the grocery store. There are several brands. It comes is a small glass jar. Because it's made of mostly basil it's GREEN:yum:

Make up your fave stroganoff recipe using hamburger (onions, green peppers, hebs/spices, mushooms). Add a bit of sour cream but don't make it too saucy.
Cut a loaf of french bread length wise and pull out the soft centers of each half. Fill one half with the stroganoff mixture and top with cheese. Place the other half on top, wrap in foil and put in a 350 oven for about 15 - 20 minutes until heated through. Slice and serve

I have never had one but I think the sandwich is dipped in eggs and milk (like french toast) before you grill it.

A monte Cristo is typically on THICK bread, the inside of the sandwhich is ham, turkey and cheese. You can either just dip the outside of the 2 slices of bread in french toast batter and fry them up like you would any grilled sandwhich. OR You submerge the WHOLE sandwhich in the egg batter and deep fry it. That are soooo GOOD :yum:

We made those Croque Monsieurs a couple of years ago after seeing that episode. Dh and I really liked them. The kids weren't excited, so I haven't messed with them again, but if we ever go to Paris, I'm gettin' me one of them! :D

oh.my.goodness. i had no idea what i was getting into when i clicked on this thread! i was wondering how many variations on the grilled cheese can there be? :lol: i am sooo hungry now for one of these sandwiches and it is only 8:21am!!!
i was going to add this: grilled sandwich with provolone cheese, slice of tomato and pesto sauce! :yum:
