View Full Version : Could you share 1 or 2 of your favorite freezer meals??

In preparation for the baby coming next week, I'd like to make a few freezer meals. I've never made any before. I usually just buy already frozen meals at the store to stock up the freezer.
Also, I cooked a bunch of chicken and ground beef and put in bags in the freezer for future meals. Could I use those already frozen meats in dishes and refreeze? :unsure:

I don't see why you couldn't use the already frozen meat and refreeze. I would probably cook the freezer meal first though.
I would make lasagna, that freezes well.
Mix for chicken pot pie, than all you do is thaw and fill a prepared pie crust and bake, super easy.
Meatloaf, spaghetti sauce, meatballs.

If you scroll down to the green box, you'll find several recipes. This website belongs to one of our local homeschoolers and is fabulous for more than the recipes! Anyway, I've made the Mexichicken, Lazy Lasagne, Black Beans, and Chicken Pot Pie. All were :yum: .

Things we freeze on a regular basis would be:
Spaghetti sauce (in three cup increments)
Meatballs (separate not cooked)
-- You can dump them both in the crockpot and cook all day on low. You can brown the meat first if you choose, but you don't have to. You can also just heat the sauce on the stove top or microwave and cook the meatballs in the oven where you won't need to stand over them.
Pizza Kit
Pepperoni (sliced), bite sized bits of chicken, ground beef (cooked), sausage (cooked), cheese (shredded), sliced onion, sliced sweet pepper. All I have to do is whip up the dough in my bread maker and throw the toppings on. We often do two pizzas and split them up so each person gets amount of pieces of their toppings.
MeatLoaf --
Freezes really well, we don't cook it first, we simply mix it up, line our "loaf" pan with foil, put the meat in, and pop it in the freezer. When it's frozen just pop out the meatloaf and finish wrapping in foil. I usually stick it in a freezer bag as well.
Marinated Chicken or Beef --
We just put the required chicken for a meal in a bag and pour in the marinade. We like the KC Masterpiece Fajita marinade (super yummy, can't get it in Australia..) You could easily slice up the onions and peppers and put in another baggie. Put both the veggie bag and the meat bag together in a bigger bag and pop in the freezer.
You can use bbq sauce, teriyaki sauce, plum sauce, apricot sauce, etc. Whatever you might normally marinade it with. We like to mix 1/3 cup of honey with /14 cup of lemon juice a clove or two of garlic. Pop it in the freezer, stick them under the broiler when you're ready to cook them up. We put them on bread rolls with tomato, lettuce, and onion.
You could use your ground beef for tacos, sloppy joes, meat in your spaghetti sauce instead of meatballs, etc. :)
They had a terrific thread here a few months ago about freezer cooking. Super informative. Maybe some of those ladies will "reshare" their tidbits.
