I was really forced to learn how to cook from scratch more when we switched to the Feingold diet last May. It has been a journey, and every month I try a few new things on my own.

I make bi-monthly menus for dinners, lunches, and sometimes snacks. These are our most popular dinners:

Mac'n'Weenies
Sloppy Joe's (I make these from scratch instead of the can....super easy)
Seasoned grilled pork chops and sweet corn on the cob
Baked Ziti
Homemade pizza - dc just love spreading out their own dough :)
Biscuits and gravy
Bacon and eggs
Egg salad
Grilled Hamburgers
Cheesy Quesadillas
Spaghetti
Frozen Pizza
Hot Dogs
Tacos (still in search of a good seasoning recipe)
Chili (newest addition to the regular list and also made from scratch instead of can.)
Meatloaf

I love getting more ideas! Great thread! :D

Sarah, would you mind sharing yours too?

SUPER ideas ladies!!! :hop: :hop: thanks!!!

Nacho preparers...What do you all put on your nachos?

I would love your french dip recipe.

The recipe is Becky Janes and it is so :yum: :yum: I have actually been making it a lot lately for some new moms. It is easy and tastes so good. Here is is:
French Dip Italian Beef Sandwiches
3-4 lb rump roast
1 can beef consomme
1 pkg. au jus mix (our store sells a bottle of concentrated au jus and we use this)
1 pkg italian dressing mix
Combine the consomme with the mixes and pour over the roast. Cook on low for 10-12 hours. Slice the meat. Serve on crusty rolls with the juices for dipping. Enjoy! :yum:

Jenny ~
For our Nachos, I put refried beans on part of the tortilla chips, then small slices of colby longhorn or cheddar cheese, shredded mozzarella cheese, and chopped scallions. We then have salsa to dip them in after they are baked at 400* for 5 minutes. :yum: :yum:

Pecan Pork Chops

INGREDIENTS
1 1/4 pounds boneless pork loin chops.
1/2 cup all-purpose flour for coating
salt and pepper to taste
2 tablespoons butter
1/4 cup honey
1/4 cup chopped pecans

DIRECTIONS
In a shallow dish, mix together flour, salt and pepper. Dredge pork cutlets in the flour mixture.
In a large skillet, melt butter over medium-high heat. Add chops, and brown both sides. Transfer to a warm plate.
Mix honey and pecans into the pan drippings. Heat through, stirring constantly. Pour sauce over cutlets.

Julie~ what do you put in your hash? I'd like to try that sometime.

My roast beef hash begins on day one, when I cook a roast in the crockpot with a can of cream of mushroom soup and a pkg of dry onion soup mix and a can of water. That evening, I pull out the roast and make a gravy with the liquid left in the CP, plus melted butter and flour. After dinner, I dice the leftover roast and save the leftover gravy.

On day two, I use my big skillet to melt some butter (1 stick) and saute a halved, sliced onion in it. Then I put in peeled diced potatoes and barely cover them with water. I cook them until they are just getting tender, then I add the leftover gravy and meat and a can of cream of mushroom soup and cook until everything is hot and the potatoes feel right. I season it liberally with pepper.

Sorry, no real recipe -- I learned to make hash by watching my mom so it was never written down.
