I did it! I joined WW today and would love to compile some tried and true recipes. Have any favorites to share? TIA!

Try the Zero Point Soup from the "Eating Wisely" book (Book 1). I saute all the veggies first- it's really good that way! I made a Chicken Tortilla Casserole from a WW cookbook tonight. It was really good. I'll type it up and post it tomorrow.

Congrats on joinging! Keep us posted on your progress!

Here is her recipe from today's email- i totally want to try.

Butternut Hash Browns!

PER SERVING (about 1 cup, entire recipe): 85 calories, 1g fat, 162mg sodium, 20g carbs, 3g fiber, 5g sugars, 2g protein -- POINTS® value 1*

These are too good topped with ketchup... Mmmmmm!

HG Tip! You don't need any fancy equipment to quickly shred your squash. A basic potato or veggie shredder will do the trick. Just peel a small squash, deseed it, and run it thru the shredder. Weeeee!

Ingredients:
1 heaping cup shredded butternut squash
2 tbsp. chopped onion
1/4 tsp. onion powder
1/4 tsp. garlic powder
dash ground cumin
dash salt
dash pepper
additional salt and p epper, to taste
Optional toppings: ketchup, salsa, hot sauce

Directions:
Spread the shredded squash out between 2 layers of paper towels. Press down to absorb as much of the moisture from the squash as possible. Repeat if necessary, until no more water can be removed.

Toss squash shreds with onion, onion powder, garlic powder, cumin, salt and pepper. Bring a small to medium pan sprayed generously with nonstick spray (a 1 to 2 second spray) to high heat. Add mixture to the pan and cook for 2 minutes. Flip shreds with a spatula and cook for another 2 minutes or so (until mixture is thoroughly cooked and browned). Season to taste with more salt and pepper. If you like, top off with one or more of the optional toppings (everything tastes good topped with these things!). Enjoy!

MAKES 1 SERVING

Zero Point Soup

2/3 c sliced carrots
½ c diced onion
2 garlic cloves, minced
3 cups fat-free broth
1 ½ c diced green cabbage
½ c green beans
1 T tomato paste
½ t dried basil
¼ t dried oregano
¼ t salt
½ c zucchini
(I also add mushrooms- cut in ½)

Saute veggies and garlic in a little olive oil ( that amt. spread out over the whole soup still comes out 0 pts). Add broth, tomato paste, herbs and salt. Bring to a boil. Reduce heat, simmer, covered about 15 min or until veggies are tender.

This is filling and yummy! I'm going to make some today!


Chicken Tomatillo Casserole
(from the WW Turnaround Program Cookbook)

1 7oz can tomatillo sauce or 1 c prepared salsa verde
1 c fat-free sour cream
1/3 c chopped fresh cilantro
1 lg shallot, finely chopped
1 garlic clove, minced
8 fat-free corn tortillas
1 ½ c shred cooked chicken breast
¾ c shredded fat-free jack or cheddar cheese
(I don’t do fat-free- so I substituted reduced fat items and upped the points a little)

1 Preheat oven to 350. Spray a 2 qt. baking dish with non-stick spray.
2. Combine the tomatillo sauce (or salsa), sour cream, cilantro, shallot and garlic in a bowl.
3. Place 4 tortillas in the bottom of a baking dish, spoon half the tomatillo mixture over the tortillas. Sprinkle the chicken over the sauce, sprinkle ½ c cheese over the chicken. Place remaining tortillas on top, spoon on remaining sauce, top with ¼ c cheese.
4. Cover dish, bake 25 min. Remove cover and bake 15 min. Let stand 5 min before serving.

I made this last night and loved it. I might add some diced green chilis next time.

This morning for breakfast I made a can of biscuits, those cans that have 10 smaller (not Grands!) biscuits in them and Jimmy Dean Turkey sausage. I put the sausage on the biscuits and we had our own yummy sausage biscuits! Everyone here loves them.

They figure up to 1 point per biscuit and 3 points for two sausage patties, so I had two sausage biscuits for 5 points. Much better than the regular sausage biscuits you can buy.

This is a good site too: Dotti's Weight Loss Zone. She has points for lots of restaurants and lots of recipes. http://www.dottisweightlosszone.com/
Also, taco soup is one of our favorites!

Ingredients

1 lb. ground turkey (or extra lean ground beef )
1 large onion, chopped (I omit since we don't like onions.)
1 pkg. Hidden Valley ranch dressing mix
1 pkg. Taco Seasoning mix
1 can Pinto Beans
1 can Chile Hot Beans
1 can whole kernel corn
1 can stewed tomatoes (Mexican flavor)
1 can stewed tomatoes (any flavor)
Brown meat and onions, drain. Mix Hidden Valley Ranch dressing mix and
taco seasoning mix into meat. Then, without draining, add all of the other
ingredients. Simmer 1 hour. If you can find the reduced sodium taco
seasoning and the reduced sodium Hidden Valley it is very helpful because
of the high sodium count in both the seasonings and the chili hot beans.
You can pretty much use whatever beans your family likes. Even green beans go well. It's nice since I normally have all the ingredients in my pantry.

I have made quite a few of these too. As a matter of fact, when I revamped our menu, I would google a recipe I always make and put the word "healthy" infront of it. THis site was always the first one listed.

Weight Watcher’s Refreshing Fruit Pie

Graham Cracker Crust
1 small box sugar-free vanilla pudding
1 small box sugar-free Jello
2 ½ cups cold water

Mix powders. Add water and bring to boil. Add 1 pint of fruit (frozen berries or fresh fruit). Refrigerate.

Good combinations
orange Jello w/mandarin oranges
raspberry Jello w/frozen raspberries

I'm sorry, I don't remember the numbers, but they were low!

I've done WW some after each baby and have lost a little. I usually laugh and say that every time I lost 10 lbs, I got pregnant again :lol: So, now I'm pregnant AGAIN and can't join you ladies, but come NEXT fall, I'll be there.....

Until then, here are a couple of "tricks" I've learned:

* Use Nature's Own 100% Whole Wheat Bread -- 2 slices are 1 point
* The individual packages of Apple Cinnamon oatmeal are 2 points each
* If you want a "quick" meal and use the WW frozen meals, you can beef it up by adding some green beans -- they take on the flavor of the meal and are 0 points
* Dill pickles (0 points) or celery (0 points) make great "tide-me-over" snacks

Maybe someone else has some helpful hints......

I think the point value for the soup is 2 per cup. If you leave out the meat and add more beans (more fiber) it is around 1 per cup. Really filling!
