My kids just loved this recipe and they are asking me to make it for New Year's but I don't know what I did with it again! I really need to take the time to make myself a recipe book of all my fiar recipes. They are all so yummy and I now have people asking me for the recipe I got off of that homeschool board! :lol:
Sheri, I made your chicken enchiladas the other night for dinner and the kids loved that as well. They said mom this is spicy yet it is sweet too. How did you do that? :lol: Thanks for all the recipes you ladies give me! I know they are the best recipes when they come from here!
OK, Now for the buffalo chicken dip recipe. Anyone?

This one isn't from the boards, but it's a recipe that we like at our house. :)
2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing (can substitute bleu cheese dressing)
3/4 cup pepper sauce, such as FranksŪ Red HotŪ
1 1/2 cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers (We like to use Wheat Thins)
Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Here's the recipe from the boards... :)
Buffalo Wing Dip
3 boneless, skinless, chicken breasts (cooked and shredded)
2 8oz pkgs of cream cheese
1 cup Frank's Hot Sauce
1 cup shredded cheddar cheese
In a mixing bowl, soften the cream cheese with hand mixer and add hot sauce. Mix until smooth. Fold in the chicken and cheese. Stir until the chicken is well covered. Spread in a large baking dish and top with a little more cheese. Bake at 350 degrees for 30 minutes. Serve with Fritos Scoops, tortilla chips, crackers or celery sticks. Enjoy!
Note: I added 1/2 cup of Ranch dressing, too, and it kicked it up a notch!!

I love this stuff. I can't make it though b/c dh doesn't like it, and I'll eat ALL of it. :lol: :yum:

Tami! That's so funny about those enchiladas. I just think of them as "RICH", but Mike says the same things your kids said "They are spicy, but also sweet", I suppose I'll have to apologize for calling him weird since someone else described them that way too.
That dip sounds wonderful!!!!

You should try the dip it you like the hot wings. Otherwise you won't like it. Give Mike a hug from us as well!:roflol: Tell him we understand him!
