Got a good recipie for mini loaves of bread to give as gifts? We ordered craft kits from oriental trading to make for our AWANA leaders, but they haven't come yet....ugh. Looks like we will improvise!!!! :lol:

When I do mini-loaves of anything, I just make my normal recipe and put it into the mini loaves. I've often made mini pound cakes or fruitcakes. I've seen in the Pampered Chef recipe books about making mini loaves of cinnamon bread.

No specific recipe for you, though.....

A couple of years ago, there were several recipes posted and I saved them. I'll post 2-3 at a time. :) And if one of these is your recipe, please let me know so I can credit you properly! :)


Lemon Yogurt Bread (FIAR)

3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
3 eggs
1 cup oil
1 3/4 cups sugar
2 cups lemon yogurt
1 tablespoon lemon extract

Preheat oven to 325. Grease two loaf pans. Mix dry ingredients and set aside. Beat eggs in a large bowl. Add oil, sugar and dry ingredients, then cream with a mixer. Add yogurt and lemon extract. Equally divide between pans and bake for one hour.


Blueberry Orange Bread (FIAR)

2 cups all-purpose flour 1/4 cup boiling water
1 teaspoon baking powder 1 egg, lightly beaten
1/2 teaspoon salt 1 cup sugar
1/4 teaspoon baking soda 1/2 cup orange juice
2 Tablespoons butter, cut up 1 cup fresh (or frozen) blueberries


Preheat oven to 350 degrees. Grease one loaf pan. In a large bowl, mix dry ingredients and make a well in center. Stir butter into boiling water until melted. In a medium bowl, combine egg, sugar, and orange juice then stir in water/butter mix. Add to dry ingredients, stirring just until moist. Fold in blueberries. Spoon in greased pan and bake for 1 hour or until a toothpick inserted near center comes out clean. Cool for 10 minutes. Remove loaf from pan and cool completely on a rack.
(Frozen blueberries work just fine in this recipe but they may "bleed" when you fold them into the batter. It still takes great!)

Poppy seed bread (FIAR)

3 eggs 1 1/2 t almond flavoring
2 1/2 c sugar 1 1/2 t baking powder
1 1/2 c milk 1 1/2 t salt
1 1/2 c oil 1 1/2 t poppy seeds
1 1/2 t vanilla 3 c flour

Blend eggs, sugar and oil. Add milk, vanilla, and almond. Blend flour, poppy seeds, salt and baking powder. Add to egg mixture. Bake in 2 greased and floured loaf pans at 350 degrees for 50-60 minutes. Cool 15 minutes and glaze.
To make glaze mix: 1/4 c OJ, 1 c powdered sugar, 2 T melted butter.




Strawberry Walnut Bread (FIAR)

3 eggs
2 cups sugar
1 1/2 cups oil
1 (10 oz.) package frozen sliced strawberries sweetened
3 cups flour
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla extract
2 tsp. cinnamon
1/2 cup chopped walnuts

Beat eggs and add sugar, and oil. Mix well. Add strawberries and the syrup they're in. Add vanilla. Stir in dry ingredients and nuts. Stir well. Pour batter into 2 greased 9x5" loaf pans. Bake at 350* for one hour. Cool in pans 10 minutes before turning out to cool completely. Chill before serving.

Zucchini Bread (FIAR)

· 2 cups shredded raw zucchini 2 teaspoons baking soda
· 3 eggs 2 teaspoons cinnamon
· 1 3/4 cups sugar 1 teaspoon salt
· 1 cup vegetable oil 2 teaspoons vanilla
· 2 cups flour 1 cup chopped walnuts
· 1/4 teaspoon baking powder

(I like to throw in a dash of nutmeg too, cinnamon doesn't seem right with out it :o)

Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt, vanilla, and walnuts. Mix together by hand. Add drained zucchini. Mix well. Pour into 2 greased and floured loaf pans. Bake 1 hour at 350° F.


Buttermilk Chocolate Bread (FIAR)

1 cup sugar
1/2 cup margarine, melted
2 eggs
1 cup buttermilk
1 3/4 cups flour
1/2 cup cocoa
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chopped walnuts
Heat oven to 350*. Grease bottom only of 9x5" loaf pan. In large bowl mix sugar & margarine. Add eggs. Stir in buttermilk. Add dry ingredients and stir. Stir in nuts. Pour into greased pan. Bake 350* for about one hour. Serve chilled.


Super Easy Apple Bread (FIAR)


One that I am baking right now is- 1 box of spice cake mix (or make it from scratch) add a can of apple pie filling bake in loaf or mini loaf pans, the sprinkle with powdered sugar. YUMMY!

Cranberry Cream Cheese Bread (FIAR)

6 oz. cream cheese softened 3/4 cup orange juice
1 egg 1/4 cup melted margarine
2 cups flour 1 egg
1 cup sugar 1 1/2 cups chopped fresh cranberries
1 1/2 tsp. baking powder 2 Tbsp. orange peel (from fresh orange)
1/2 tsp baking soda 1/2 cup chopped nuts
1/2 tsp salt

Mix cream cheese and one egg. Set aside. In another bowl mix dry ingredients together and then add juice, margarine and one beaten egg. Fold in cranberries and orange peel. Add nuts. Grease and flour bottom only of a 9x5" loaf pan. Spoon half of the batter into the pan and then spoon cream cheese mixture evenly over batter. Top with remaining batter. Bake at 350* for about 70 minutes. Check after one hour. Cool 15 minutes then remove from pan to cool completely. Wrap tightly and store in refrigerator. Delicious chilled.


Cherry Pecan Bread (FIAR)

1/2 cup margarine 1 teaspoon vanilla extract
3/4 cup white sugar 2 cups all-purpose flour
2 eggs 1 (10oz) jar maraschino cherries,
1 cup buttermilk drained and chopped slightly or halved
1 teaspoon baking soda 1 cup chopped pecans
1/2 teaspoon salt

1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 x 5 inch loaf pan.
2. In a large bowl, cream butter or margarine and sugar together. Add eggs, and continue mixing until light and fluffy. Add baking soda, salt, and vanilla; mix thoroughly. Alternately add buttermilk and flour to the creamed mixture, mixing only enough to hold ingredients together. Fold in cherries and nuts, mixing lightly. Turn batter into prepared pan.
3. Bake for 50 to 60 minutes, or until bread tests done. Cool completely before slicing.


Eggnog Bread (FIAR)

2 eggs 1 tsp. vanilla extract
1 cup sugar 2 1/4 cups flour
1 cup dairy eggnog (not canned) 2 tsp. baking powder
1/2 cup margarine, melted 1/2 tsp salt
2 tsp. rum extract 1/4 tsp ground nutmeg

Beat eggs in large bowl. Add sugar, eggnog, margarine & extracts. Add flour, baking powder, salt and nutmeg; stir just until dry ingredients are moistened. Grease bottom only of a 9x5" loaf pan. Pour batter into pan and bake at 350* 45-50 minutes or until it passes the toothpick test.
Cool 10 minutes before removing from pan to cool completely. Very good served chilled.

Chocolate Banana Bread(newspaper clipping)

6 medium ripe bananas(2 _ cups pureed) 2 egg whites
1 cup sugar 3 cups all-purpose flour
_ cup canola oil 1 teaspoon baking powder
1 teaspoon salt _ teaspoon baking soda
1 teaspoon vanilla _ cup cocoa
1 whole egg _ cup fresh coffee, room temp

Pre-heat oven to 350 degrees. Lightly coat two loaf pans with cooking spray. Dust with flour.
Peel the bananas and puree. Combine bananas and sugar on medium speed until sugar dissolves. Gradually beat in oil, salt, vanilla, egg and whites.
In separate container, combine flour, baking powder, baking soda and cocoa. Gradually add flour mixture and coffee, alternately, into bananas. Pour into pans.
Bake for 40-45 minutes or until toothpick comes out clean. Cool about 10 minutes, then remove from pans and cool completely on wire rack. Wrap in plastic.


Hawaiian Banana Nut Bread (Margaret Lopez, USUHS)


3 c all-purpose flour(I sub 1/2 ww) 3 eggs, beaten
2 c sugar 2 c mashed banana
1 tsp baking soda 1(8 oz) can crushed pineapple, drained
1 tsp salt 2 tsp vanilla
1 tsp cinnamon 1 1/2 c oil
1 c chopped nuts


Combine dry ingredients. Stir in nuts and set aside. Combine remaining ingredients, stirring just until moistened. Spoon batter into two greased loaf pans. Bake at 350 for about an hour or until loaves test done near center. Cool 10 minutes. Very moist!



Me again! I have made the eggnog bread, blueberry orange bread, hawaiian banana bread, cherry pecan, cranberry cream cheese and lemon yogurt before. All were :yum: !
