I checked out a book from the Multicultural Cookbooks series at our local library the title is "The People of China and their food" there are also books for Africa, Mexico and Russia.

Anyway, I tried the following dessert recipe which is very easy and my girls loved. I will definately double it next time. We used 2% milk because that is what we had on hand and used the Kitchen smarts step for the orange. We served it warm, I'd like to try it chilled next time to see if it makes a difference.

Orange Pudding

1 large orange
2 cups milk, skim or lowfat
3 ounce package of tapioca pudding mix
1/8 teaspoon almond extract

Peel the orange. Be careful to remove the white membrane from each section. Break or cut the sections into small pieces.

Put milk in saucepan. Stir in pudding mix. Cook on medium hear, stirring most of the time, until the pudding comes to a boil. Remove from heart. Stir in almond extract.

Cool 15 minutes, stirring twice. Stir in orange pieces. Serve warm or chill and serve later. Serves 6.

Kitchen Smarts: You can use mandarin orange segments from an 11 ounce can, drained, instead of a fresh orange pieces.

Oh yumm-o! We'll be rowing this book the second week of December so I'll ahve to file that one away. ;)

Our three youngest are from China; two came here as 8 and 12 yr olds. The other night they excitedly told me that I had prepared "BLOW", a dish they enjoyed at their swi (orphanage). They gobbled up 3 helpings each! I had no idea that Stovetop Dressing was served in China :lol:

I'll have to ask my Chinese friends to explain this one to me.
