for Maple and Tangerine Glazed Carrots??

It sounds wonderful!! I've been trying to come up with something different, but not too different, since my in-laws are very picky eaters.

Maple & Tangerine Glazed Carrots

1 3/4 C fresh tangerine juice (I use orange if I can find tangerine!)
3 T maple syrup
1/4 stick butter
1 teaspoon fresh lemon juice
1/2 tsp grated tangerine (or orange!) peel

2.5# large carrots, about 12 (peeled, cut on the diagonal into 1/2" ovals)
pinch of cayenne pepper

1/2 large tangerine (or orange!), seeded
chopped fresh parsley

Combine first 5 ingredients in a skillet over med-high heat. Boil until sauce thickens and coats the spoon thickly and is reduced to 2/3 cup..whisking occasionally. About 8 minutes.

Steam carrots until crisp-tender. Mix carrots, cayenne pepper into the sauce. (This can be made 1 day ahead. Cover and chill).

Simmer carrots in sauce over med-heat until heated thru. Stir occasionally. Season with salt and pepper. Transfer to a bowl, squeeze tangerine half and sprinkle with parsley.
