Mikey (8) always has a chapter book that he is reading on his own. Right now it is the 4th Harry Potter book.
Then he does some cursive copywork.
He does a few pages of Language (Abeka).
And, he does a page or two of Math daily.
This year he started his own daily devotion book which he reads independently as well.
Besides all of that, I always have some library books around that he can dive into when he feels like it. Usually, they are science type stuff.
Oh, I also have some CDs with scripture put into songs. The kiddos like to put on the headphones and listen to these pretty regularly. (great for memorization)
You can also make available educational games and computer games. And, DVDs from the library that are related to your FIAR title are always fun. The Magic School Bus ones are fantastic for science.
That's about it. (We also add Story of the World cds for History, but we do that all together.)
If she's willing, wouldn't it be fun for her to write a sequel to her FIAR book? It wouldn't have to be long and she could also do illustrations.

Amy is in 3rd this year and she does a lot of her school work semi independently. She works on assigned lessons from Math U See, handwriting, history reading and journalling alone. She also has computer time/typing and Quarter Mile Math. If she still has time she is often listening to music and choregraphing worship dances. I try to send them each outside twice each morning for some nature observing and fresh air :)
With a younger sister Any does Sonlight Science I. With another sister she reads aloud or listens to her practice reading. It gives me much needed one on one time with each of them.

We do Math, spelling, extra math fact practice, and journal writing to go along with the seasons. This month we are writing about Thanksgiving. I will grab bits of information about it, and they copy it.
We have computer game time, and playing outside for now.

When I have to work with one child vs the other for one on one time we have the other do computer time or leapster time. It depends on what I want them to "work on" the most. That and we're doing our own patch program based on our FIAR books, so they like to look at their "stuff" (read lapbooks and such) so they can earn their badges.
