How much does this recipe make? For example, how many 9 x 13 pans would it make? TIA!

This recipe is HUGE! Definitely 2 9x13 pans. I used one of the large disposable foil pans. We had it for dinner, lunch the next day, and then I sent the rest to my sister! This will feed a crowd!
By the way, it is also very :yum: .

I have feed about 30 with it. Teens included! I make it in a huge roasting pan, so about 2 9by13's

Barb's Taco Casserole
Brown 4 lbs. of meat (beef or turkey); add 2 packs of taco seasoning and 4 cans of mild chili beans.
Spread a thin layer of the meat mixture in the bottome of the pan. Add a layer of corn tortillas on top of the meat. Layer more meat, more tortillas and a final layer of meat.
Mix 4 cans of original rotel tomatoes with 2 cans cream of chicken soup. Pour over the meat mixture and top with sliced black olives and grated cheese.
Cook at 400 degrees, until bubbly on top. Serve with tortilla chips, salsa and sour cream.
You can fix this ahead of time and freeze it.

Just made it and it makes 2 (very filled) 9 x 13 pans!

Yep! 2 9x13's or one big aluminum roasting pan. I always use the roasting pan because then I can throw it out when I am done! It does feed a ton and is quite inexpensive when you have got to fill a lot of hungry people! :)

Why do you serve it with the tortilla chips? Is it more like a dip than a "casserole" ? Just wondering...... Could it easily stand alone without the chips?

It can definitely stand alone. I did serve it with chips and salad. It fed my family, two extra teenage boys and their Mom. It's great for feeding a crowd. :)

I don't know if you remember, but I brought this recipe to Elysa's get together.
I serve it with Pico de Gallo, and chips (for crispiness), also a little sour cream...cuz it tastes good!:yum:

When I am making this recipe for just my family, I will split the recipe into fourths. So I end up one 9x9 pan to eat, and the other 3 I freeze. Great economy stretcher. :)
