I have all of the ingredients, even the tahini, so does anyone have a good recipe?

Too, funny! My sister just called and asked me to email her my hummus recipe.


Roasted Red Pepper Hummus

1 can garbanzo beans, rinsed & drained
2 cloves garlic, minced
½ cup roasted red peppers
1/3 cup tahini
¼ cup lemon juice
¾ tsp salt
¼ tsp cumin
¼ tsp coriander
¼ tsp ground red pepper

Combine all ingredients in food processor and blend until smooth.

Tahini is basically ground sesame seeds.

It can often be found in that little section of the store where they sell Kosher stuff. The one time I tried buying some, it was rancid. But that was in a conventional grocery store. We have a Whole Foods here now; I bet I could get some there.

Hummus

2 -3 medium cloves of garlic
a large handful of parsley
2 scallions, in 1" pieces
2 cans chick peas, rinsed and drained
6 T tahini
6 T lemon juice
3/4 tsp salt or to taste
dash of cayenne and cumin, to taste

Puree all in a food processor to a thick paste.

I use the same Hummus recipe as Stacy (love my Moosewood Cookbook!) and it's always delicious. Hummus and homemade pita bread...one of my favorite comfort food combos in the world. :yum:

I love hummus and have made it several times BUT I can never get the texture like that of store bought or restaurant hummus--- it always has a little grittiness to it which is irritating. I have tried using the blender and the food processor - both with similar results. Do any of you other hummus makers have any tips to avoid this?

How long are you processing it? I blend mine for a good 5-10 min to get the store bought consistency.

I like hummus a million times better when I prepare the chickpeas at home. The can is ok, but dried and then cooked and cooled are my favorite. Also, you can use the broth from cooking to get the best consistency without watering it down or having to use too much oil.

I don't use Tahini. I don't like it. So I leave it out.

I just take some chickpeas and put them in a food processor with some olive oil, and lemon juice, garlic, and salt. Everyone here loves it.

I get much better results in a food processor than when I use a blender.

Alana - I have dried chickpeas, and I just haven't googled to see how to cook them. Do you soak the chickpeas before you cook them? How long do you cook them?

I love hummous! I'm looking forward to making my own.

Elizabeth, I start out with dried chick peas too, I just throw them in the crock pot and add quite a bit of water and cook on high for a few hours. I never soak mine.

My SIL always soaks hers. I don't think I do. I am really impatient with beans/peas. I always just chuck them in the pot and turn the burner to HIGH!

Sorry, I forgot about the hummus thread. I am bad about not checking in after I give advice.:lol:
