I can't remember who's recipe it was, but there was an incredible cookie recipe that called for Starbucks beans. Anyone have that recipe still?

Oh, that would be my recipe. :) I'm not a huge cookie fan but I do love these!! :yum:


Coffee Bean Cookies

½ c butter

½ c shortening

¾ c sugar

¾ c brown sugar, firmly packed

2 large eggs

1 tsp vanilla extract

2 ¼ c all-purpose flour

1 tsp baking soda

1 tsp salt

½ tsp ground cinnamon

1 cup chopped almond, toasted

3 (2 oz) packages chocolate-covered coffee beans (1c)

4 (1.4 oz) English toffee candy bars, chopped (about 1 c)


Bet butter and shortening until creamy; gradually add sugars, beating well. Add eggs and vanilla; beat well.

Combine flour and next 3 ingredients; add butter mixture, beating well.

Stir in chopped almonds, chocolate-covered coffee beans, and English toffee candy bars. (Cover and chill dough if desired.)

Drop dough by heaping teaspoonfuls onto ungreased baking sheets.

Bake at 350 degrees for 10-11 minutes.

Yield: 4 dozen

Ooh, those are a favorite here, too!

Of course...this coming from one who has been known to keep a stash of chocolate-covered coffee beans in her purse (for emergencies only, of course). :blush: :D

These are fabulous cookies. I make them at least once a month for the guys on my husband's crew. They always cheer when they see me coming with a basket full of them! :lol:
