Can we start with the Christmas Cookie recipes now? That way I can test them without rush. I would like your BEST cookies - not necessarily Christmas cookies. I love cookies. It's my favorite food group:clap: :kiss:

German Chocolate Cake Cookies

Dough 350
2 sticks butter
1 c semi-sweet choc chips
2 c white sugar
2 eggs
1/2 t baking powder
1/2t baking soda
1/2 t salt
2t vanilla
3 c flour

Frosting
1/2c brown sugar
3/4c shredded (sweet) coconut
1/2 c chopped pecans
1/4 c clod butter
2 egg yolks

melt butter and choc chips in micro or in small pan. Add sugar and eggs in another large bowl and mix. Add baking powder, soda salt and vanilla. Stir in the choc butter mixture. Add the flour. Will be a bit stiff. Cover and set aside.

In a food processor add sugar and coconut. (The recipe is not clear about sweet or unsweet coconut. I bet either is fine. I had sweet.) Process into small pieces. Add pecans and butter and process until all is in small bits. Blend yolks with a fork and then add to the processor and blend them in. Chill this frosting.

Roll dough into 1 in balls. Press hole (or thumb) into dough. Roll or pat frosting into 1/2 in ball and place in dough depression. Bake 350 for 10-12 minutes. Frosting should be "just" starting to brown. Cool 2min then move to wire rack.

These are the best cookies I have ever made. Not too sweet, moist and chewy.

Winter's Best Gingersnaps

Amount Measure Ingredient -- Preparation Method

3/4 cup butter or margarine -- softened
3/4 cup vegetable shortening
2 1/4 cups sugar -- divided
2 eggs
1/2 cup light molasses
4 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons ground cloves
2 teaspoons ground ginger

Using an electric mixer, work butter and shortening until creamy. Gradually work in 2 cups sugar. Continue creaming until light. Beat in eggs and molasses thoroughly.
Sift together flour, baking soda, cinnamon, cloves and ginger. Gradually beat flour mixture into creamed mixture. Beat hard. Mixture will be soft. Chill dough for about an hour for easier handling.
Roll pieces of dough the size of walnuts between palms of hands. Roll balls in remaining 1/4 cup sugar. Place balls on greased baking sheets, approximately 2 inches apart. Bake in a preheated 375°F oven about 10 minutes, or until brown. Transfer cookies to a cooling rack.
Store cookies in airtight tins, or freeze. Makes 9 dozen.

Renee-Oh my goodness! I love cookies too! They are so fun to make and even more fun to eat!

Julia-I LOVE ginger snaps, but I've never tried making them, I will definitely try this recipe!

Here are two of my favorite cookies we always make around Christmas time.

Snowballs
Some people may not like these too much. They aren't too sweet. The texture is buttery and a little crumbly and the powered sugar they are rolled in makes it!

1 C. butter, softened
1/3 C granulated sugar
2 tsp. water
2 tsp. vanilla
2 C. Flour
1 C. finely chopped pecans

Cream butter and sugar. Add water and vanilla, mix well. Blend in flour and nuts. Roll into balls on ungreased cookie sheet. Bake at 325 for 20 min Let cool completely(very important). Then, roll in powdered sugar.



Peanut Butter Cup Cookies
These are to DIE for! If you love peanut butter and chocolate, you HAVE to make these!

1/2 C. butter, softened
1/2 C. brown sugar, packed
1/2 C. granulated sugar
1 egg
1/2 C. creamy peanut butter
1/2 tsp. vanilla
1 1/4 C. flour
3/4 tsp. baking soda
1/2 tsp. salt
apx. 42 mini peanut butter cups(like Reese's)

Combine butter, sugars, egg, peanut butter and vanilla, beat until smooth. In a separate bowl, combine flour, soda and salt. Add to peanut butter mixture. Cover dough and chill. Roll in small balls. Place in greased mini muffin pan. Bake at 375 for 8-9 minutes. Remove from oven, then gently press one cup into each ball. Cool for 10 minutes in the pan.

Here are one of my favorites! I'll try to post some more as I have time.

Chocolate Chip Pumpkin Cookies

1 (15 oz) can prepared pumpkin (not pumpkin pie mix)
2 large eggs
3/4 Cup vegetable oil
2 Cups Sugar
2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 tsp. ginger
4 Cups flour
1/2 tsp salt
1 Tbsp baking powder
2 tsp. baking soda
1 (12 oz) package of semi sweet chocolate chips
1 Cup chopped walnuts

1. Mix the pumpkin, eggs, oil, sugar and spices together until well blended.

2. In another bowl, mix the flour and leavenings together. Add the dry ingredients to the wet ingredients and mix.

3. Fold in chocolate chips and nuts.

4. Drop by spoonfuls on well-greased baking sheets (I use parchment paper so I don't have to grease my pans). Bake 11 minutes @ 375 degrees or until edges begin to brown.
Remove cookies immediately and cool on wire racks.

I'm guessing it's a typo Cyndi. Maybe cold butter? If you're putting butter in a food processor and making a crumb-type concoction and keeping the stuff chilled I'm betting it should start out with cold butter.

BTW, Renee, those German Chocolate Cookies sound :yum:

Sorry ladies. It is COLD butter. Given some of the recipes that fly around here I can understand the confusion.
