I have been digging and I can't find my recipe. Anyone???? I am wanting to make these for a get together tomorrow!

Cappucino Muffins with Espresso Spread
Espresso spread:
4 oz. cream cheese, cubed
1 tbsp. sugar
1/2 tsp. instant coffee granules
1/2 tsp. vanilla
1/4 c. mini chocolate chips
Muffins:
2 c. flour
3/4 c. sugar
2 1/2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1 c. milk
2 tbsp. instant coffee granules
1/2 c. butter or margarine, melted
1 egg, beaten
1 tsp. vanilla
3/4 c. mini chocolate chips
In a blender or food processor, combine the spread ingredients; cover and process until well-blended. Cover and refrigerate until serving.
In a bowl, combine the flour, sugar, baking powder, cinnamon, and salt. In another bowl, stir milk and coffee granules until coffee is dissolved. Add butter, egg, and vanilla; mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips.
Fill greased or paper-lined muffin cups two-thirds full. Bake at 375 degrees for 17-20 minutes or till muffins test done. Cool for 5 minutes before removing from pan to wire rack. Serve with espresso spread.

Goodness, I'd forgotten just how amazing these are. Mine just came out of the oven. Nikki, thanks again for sharing this recipe. :kiss:

One of my favourite recipes! I haven't made them in such a long time but think this will be a nice treat for breakfast tomorrow. :yum: :yum:
