Could we make a list of meatless meals? Some with beans, a lot without:D And if needed, post the recipe also.:clap:
Right now the only one I can think of is Spaghetti which is why I need your all's help:kiss:

Here's how we make vegetable soup. I actually make it beef vegetable, but can obviously skip the meat, or if you can buy a little stew meat and just chop it up pretty fine, that might add a little to it.
2 cans of veg-all
1 46-oz can of V8
1/4 of barley
1 bay leaf
Simmer on low until the barley is done. If I were not putting meat in it, I'd put more barley, at least 1/3 c and maybe even 1/2 c. That and some bread makes a satisfying meal around here.

Soup & Sandwich night - veggie, tomato, butternut, or some such soup with grilled cheese sandwiches. You could even fancy up the sandwiches with some basil and tomato slices.
Here's one from a Southern Living cookbook: Vegetarian Night
Black Beans & Yellow Rice
Tortilla Chips
Pineapple Chuncks - toss a little chopped cilantro in with the canned pineapple and serve as a side dish or top with flaked coconut and make it a dessert. Here's the recipe for the black beans:
1 package saffron rice mix
1 can black beans
3 tablespoons lime juice
1 tsp chili powder
1/2 tsp ground cumin
2 tbsp chopped fresh cilantro, divided
Garnishes: sour cream, sliced green onions
Cook rice according to package directions; keep warm.
Meanwhile, drain beans, reserving 2 tablespoons liquid. Combine beans, reserved liquid, lime juice, chili powder, and cumin in a saucepan. Cook over medium heat until thoroughly heated; stir in 1 tablespoon cilantro. Serve beans over rice, and sprinkle with remaining 1 tablespoon cilantro. Garnish, if desired. Yield: 3 servings. :yum:

We like:
Lots of pasta and sauce with fresh parmesan. Garlic bread and veggies round it out.
Omlettes, different cheeses, herbs, and jams.
Boca burgers if we're in a rush.
Cheese or cheese/bean quesidillas (sp?)
Burritos with spanish rice, refried beans, lettuce, cheese, olives, quacamole, salsa
Big Caesar salads
Soups/stews Minestrone and Pasta E Fagioli are a couple of favorites. I use the copycat Olive garden recipe minus the ground beef. :yum:
Frittatas (here's a favorite)
SPINACH FRITTATA
Ingredients
1 pkg frozen spinach, cooked & drained 6 eggs, beaten
2 cups shredded mozzarella 1 medium onion, chopped
1 tsp. olive oil 1/2 tsp. oregano & basil
2 cloves garlic, minced Dash cayenne powder
1 cup 1% milk
Saute onion & garlic in a non-stick pan with olive oil until golden.
Set aside.
Blend eggs, milk, cheese and spices.
Stir in vegetables.
Pour in quiche pan and bake in 350 degree oven for 1 hour or until top is golden.
Crustless Quiche
1 dozen eggs, beaten like for scrambled eggs
1/4 cup milk
Salt and pepper to taste
1 small package of frozen, chopped spinach
drained
1/2 small onion, chopped and sautéed
6 oz. shredded sharp cheddar (I use low-fat)
In a bowl, beat your eggs and add milk, salt and pepper. In a lightly greased 9-by-13 pan, spread spinach and cheese, then top with egg mixture. Bake at 350 for 20-30 minutes, but check it often. I have noticed a great deal of difference in cooking times on this.
This is just the basic recipe, I use spinach, broccoli, muchrooms, etc. whatever I have on hand. I like it chunky with veggies, instead of just a few veggies surrounded by lots of egg :) . I also use different cheeses with this recipe. Diced ham is good in this for those who like meat. Oh, and I also like a few sprinkles of Tabasco. :yum:
Garden Sandwich
Havarti cheese, lettuce, tomatoes, sprouts, red peppers, mushrooms, red onions, cucumbers and Roasted Garlic Tomato spread.
This is good on a dense bread, toasted or not.
Cheese pizza
fetuccini alfredo
Stir fry veggies over rice or noodles
I'm sure there's more, but mostly I cook without a recipe so my meals don't really have a name or list of ingredients :D .

:yum: Three Pepper Alfredo:yum:
Sun dried tomato alfredo
Bag of frozen 3 pepper blend w/ onion
Sun dried tomatoes (extra-optional)
Any type of pasta
-Heat pepper blend in skillet with a smidge of butter.
-Add alfredo sauce
-Snip sun dried tomatoes into sauce
-Serve over pasta
More later....crying baby awaits!!!
