Ladies,

If you could only pick ONE ULTIMATE FAVORIITE recipe what would it be? Please include the recipe. Thanks.:yum: Here's Mine

Chicken and Rice Casserole Recipe courtesy Paula Deen

2 (14 1/2-ounce) can green beans, rinsed and drained
3 cups diced cooked chicken
1 medium onion diced and sauteed
1 (8-ounce) can water chestnuts, drained and chopped
1 (4-ounce) can pimentos
1 (10 3/4-ounce) can condensed cream of celery soup
1 cup mayonnaise
(6-ounce) box long-grain and wild rice, cooked according to package directions
1 cup grated sharp Cheddar
Pinch salt

Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

Rigatoni with a Thick Mushroom Sauce

*This is one of our favourite recipes that is often requested as the “birthday meal”!!

¼ c. olive oil
1lb. Portabello mushrooms, cleaned
2 cloves garlic
1/8 tsp. crushed red pepper
1½ c. chicken broth
1 chicken bouillon cube
1 1/2 Tbsp. finely chopped Italian parsley
1/4 tsp. salt
1 lb. Rigatoni
¼ c. Parmesan cheese

Put oil in large, non-stick skillet and grate mushrooms over pan using largest holes on the grater. Add garlic and crushed pepper. Saute over medium heat until liquid from mushrooms evaporates, about 10 minutes. Add broth and bouillon cube, increase heat to high and cook10-12 minutes for flavours to blend and liquid to reduce somewhat. Remove from heat, stir in parsley and salt and set aside.

While sauce cooks, bring a large pot of water to a boil, add pasta and cook until al dente. Drain well and return to pot. Add mushroom sauce and stir over medium heat for 1 minute. Remove from heat, add cheese and toss to mix. Serve immediately.

Note: I usually double the sauce and add a little cooking wine to the sauce when I add the bouillon. This just gives it a little extra flavour. I also usually add a little cilantro in place of some of the parsley because we love cilantro. In other words, this is the general recipe (which is delicious), but you can be a little creative!

Stuffed Shells
Sauce
3 cans of tomato sauce (I use 4 cans)
1 stick butter
1 Tbs Italian seasoning Put on low heat and let simmer while stuffing the shells

Shells
Manicotti Shells (or large shells---have to parboil these though-so I prefer Manicotti)2 boxes (I usually get about 24 of the 28 shells stuffed)
8 ounces shredded mozerella can use more I use about 12 ounces
1/2 cup Parmesian Cheese
15 ounces of Ricotta (can use cottage cheese with a smidge of salt)
2 eggs
1 TBS Italian Seasoning

Mix together and stuff into the shells. Put some of the sauce on the bottom of the baking pan (one layer) cover with remaining sauce; cover with foil and bake for about 20-30 minutes at 350 to 375. Uncover and bake 10 minutes more or until the shells are soft but not mushy.

Apple Chicken! (especially in the fall!) :yum:
1 1/4 t. veg. oil
6 boneless/skinless chicken breats cut into 1/2" cubes
4 granny smith apples cored and sliced into 1/2" wedges
3/4 c. dry white wine (you cannot skip this part!!!)
3/4c chicken broth
1/3 c brown sugar
1/4 c cider vinegar
3 T cornstarch
2 T. Worcestershire
1/2 t. salt
1 t. blk pepper

Heat oil in large nonstick skillet. and chicken and brown on all sides. Add apples slices, saute 3 min., stirring occasionally. Add 1/2 the wine and chicken broth, reduce heat, cover and simmer 10 min. Mix remaining wine and broth together with remaining ingredients, add all to skillet cook over med. heat stirring constantly until the sauce thickens.
Oh man, this is good! (I'm salivating at the thought!) We love this after we go to the apple orchard.
I really like this served with acorn squash and a salad!
It's from the saving dinner cookbook, which is a MUST have, even if you don't follow the menus.

Orange Chicken Stir Fry - it is easy and yummy. I usually get a request for recipe whenever I serve it:

I usually do it with carrots instead of bean sprouts. I add slightly steamed carrots.

Ingredients:

1 cup orange juice 1 tablespoon grated orange zest 1/4 cup soy sauce 1 teaspoon salt 3 cloves garlic, chopped 1 tablespoon brown sugar 3 tablespoons vegetable oil 4 skinless, boneless chicken breast halves - cut into 1 inch squares 2 tablespoons all-purpose flour 1 cup bean sprouts, optional; (I use a cup or two of chopped cooked carrots)


Directions:

1 In a small bowl combine the orange juice, orange zest, soy sauce, salt, garlic and brown sugar. Mix well.

Heat oil in a large skillet or wok over medium high heat. When oil begins to bubble, add chicken. Saute until cooked through (no longer pink inside), about 7 to 10 minutes.

Add orange sauce mixture to chicken and cook until sauce begins to bubble. Add flour, a little bit at a time, until sauce has thickened to your liking. Add bean sprouts and cook for 1 minute;

Makes 4 servings

A link is posted above to Penne with Chicken and Pesto. However, I prefer to use bowtie pasta with it and I also add 5-6 sliced mushrooms but that is optional. I also cut the olive in 1/2 and it is just fine. I don't add the cheese until just at the very end so that it doesn't all melt into the pasta. I also put a lot more garlic in it. But we just like garlic!

It is so very yummy!

Above is posted a link to one of my very favorite recipes! I had to post this 2nd recipe as it is such a great one. It is perfect for a potluck, summer meal or leftovers. We just love it! It makes a lot too. I make it exactly as the recipes is with the expection of the tequila.

Just had to say thank you for the YUMMY recipe! I fixed this tonight for supper and it was a big hit! Will definitely be adding this to our favorites! :)
