Speaking of breakfasts (as in another post)...... does anyone have any good crockpot breakfast ideas? One of my friends in Jax always put breakfast on in the crockpot before she went to bed at night, so they had a hot breakfast every morning. She never got me the recipes before we moved, so I wondered if any of you ladies have tried that.....
I'd love some recipes to try :)

Paige.. Mom use to make oatmeal in the crockpot a LOT. She'd add chopped apple, raisins, and cinnamon to rolled oats, add water and leave it on low after she went to bed. We woke up to a nice warm breakfast before having to go do barn chores. lol
Here's a crockpot Egg Casserole Dish
Use your imagination when making this recipe. Try Canadian bacon instead of ham. Use Havarti or Swiss cheese instead of Cheddar. Add some minced jalapeno peppers if you like hot foods. Then enjoy!
INGREDIENTS:
* 32 oz. bag frozen hash brown potatoes
* 1 lb. cooked ham, cubed
* 1 onion, chopped
* 1 green bell pepper, chopped
* 1 Tbsp. olive oil
* 1-1/2 cups shredded Cheddar cheese
* 12 eggs
* 1 cup whole milk
* 1/2 tsp. salt
* 1/2 tsp. pepper
PREPARATION:
Spray inside of slow cooker with nonstick cooking spray. In small skillet, cook onion and green pepper in olive oil until crisp tender. Let cool about 10 minutes. Place one third of the frozen hash brown potatoes in the slow cooker.
Add one third of the ham, onion, green pepper and cheese. Repeat layers, ending with the cheese.
In a large bowl, beat the eggs, milk and seasonings until well mixed. Pour over the ingredients in the slow cooker, cover and turn on low. Cook for 10-12 hours, until casserole is set and eggs are thoroughly cooked. Serves 12
I'm thinking Baked French Toast would be good too!
Here's there we use:
Baked French Toast With Apples
Serves 4
2 eggs
1/2 c skim milk
3 T brown sugar
1 1/4 t cinnamon
4 slices whole wheat bread, cubed
2 small apples, peeled, cored, and diced
3 T flour (all purpose)
2 t reduced calorie margarine
Mix the first 4 ingredients together (minus 1/4 t cinnamon-- reserve that). Drop the bread in and toss to coat. Let sit until mixture is absorbed by bread. Spray an 8x8 pan with non stick spray and spread mixture evenly in the pan. Mix the last two tablespoons together and the last of the cinnamon. Mix until crumbly and sprinkle on top of the bread mixture. Bake for 20-30 minutes or until it's golden brown. Bake at 350.

I never, ever thought of using my crockpot for breakfast! :blush: What a terrific and :yum: idea! I'll have to give Kendra's recipes a try.

Kendra, for the oatmeal, do you add the "normal" amount of water? I can't imagine cooking oatmeal, even on low, for 8 hours (or so).

I have never tried this- but it sounds yummy :yum: - I'm just afraid it would dry out- anyone know?
Deluxe Crockpot Oatmeal
(7 servings)
* 1 C quick cooking oats
* 2 C milk
* 1/4 C brown sugar
* 1 T butter - melted
* 1/4 tsp. Salt
* 1/2 tsp. Cinnamon
* 1 C finely chopped apple
* 1/2 C raisins and/or dates
* 1/2 C chopped walnuts or almonds
Grease the inside of Crockpot. Throw all ingredients inside Crockpot and mix well. Cover and cook on low for 8 to 9 hours. Stir before serving.
Great served with milk.
I tried oatmeal in the crockpot.

Crock-Pot Breakfast Cobbler
4 medium-sized apples, peeled and sliced
1/4 C. honey
1 t. cinnamon
2 T. butter, melted
2 C. granola cereal
Spray inside of Crock-Pot with nonstick spray. Place apples in slow cooker and mix in remaining ingredients. Cover and cook on low 7-9 hours, or overnight (alternately, cook on high 2-3 hours). Serve with milk.
Makes 4 servings.
I wonder if one couldn't make up an extra batch of sausage gravy one morning and reserve some for another morning. You might be able to put the reserved gravy in a crockpot the night before and add more water/milk and heat it on low. Instead of baking biscuits that morning eat it over toast. :unsure:

ETA: A question here -- I don't have granola cereal but I do have that Kashi Go-Lean Crunch. Wonder if it would work?

Okay, I'm going to go tell Sarah I want us to have that apple thing for breakfast on Friday. :yum: I know SHE'LL remember to make sure I get it going Th night. Of course, she'll be in bed when it's time to start it. Hmm. Maybe she'll have nagged me enough by bedtime that I'll remember.
Paige, I think Go Lean Crunch would easily substitue for granola.

I sort of feel the same way about it, but my kids really like it! :D I add chopped apples, raisins, cinnamon, etc...and they gobble it up. :spin:

I tried the oatmeal this morning (or last night :) ). I thought it was okay. My kids loved it (well, except for the sick one, but she's sick, so.....), and I really enjoyed having something "different" for breakfast. I'd cooked, it was ready, no one complained when I just dished up breakfast, there was no discussion about who was going to have what for breakfast, and dh appreciated a warm breakfast (although he did say that oatmeal wasn't his favorite :lol: -- he ate it). I'll do it again -- maybe every couple of weeks?
Next I think I'm going to try Kendra's French Toast recipe. That sounds :yum: I bet the kiddos like that one, too.
I also was thinking (I like the idea of the simplicity of it all, ya know)..... I wonder if you could get an "overnight" breakfast casserole "sitting" in the fridge during the day and then bake it in the crockpot overnight? I bet it would work. Do you know the ones I mean -- the sausage or ham and eggs and bread and cheese (or some combo thereof). Just a thought.....

Paige, I know what you mean and I've wondered the same thing. I don't see why we couldn't try it. It would probably work. I'm sure that's how someone figured out you could do oatmeal in the crock pot! ;)

Unfortunately, my kiddos aren't big into casseroles AT ALL (I know it usually comes with age), so I don't think I'd fix it for us. Dh and I would eat it, but part of the purpose is to fix something for the kids so I don't have to scramble in the mornings. I thought it might be nice for company.....
I saw Julie Y's thread somewhere where she mentioned she does 13x9 "bakes" in the winter for breakfast -- I bet those could be "translated" into crockpot breakfasts.

There was also a huge thread on another yahoo group I am on that was discussing breakfast and how a lot of people eat "non traditional" (for Americans) foods for breakfast like soup, burritos and noodle dishes. We eat pancakes for dinner sometimes why not put on a pot of soup in the crockpot before you go to bed and have a hot bowl in the morning??? Just an idea to throw out there!

I am always up for leftover meatloaf, enchiladas, potato soup and the like for breakfast. My family thinks it's gross but when I do eat non-traditional things for breakfast I don't eat nearly as much during the rest of the day's meals.

I have tried oatmal many times in the crockpot.
Sometimes it is pretty good and other times the term "wallpaper paste" comes to mind. :eek:
I might get motivated and dig out my notes on what worked and what didn't. It is so nice on church mornings to just open the thing and eat. :lol:
I give you my FIAR promise that I will dig up my notes. ;)

I've found this to be true for myself, too, Oney. :yes:
I used to think it was psychological, but maybe it has to do more with the higher protein content of, say, a meatloaf than pancakes or oatmeal.:unsure:
I love cold pizza for breakfast.:cool:
